I use spinach without washing it as a substitute for lettuce. I must get what nutrients I can. My Mom used to make beans and spinach and boy do I wish I had her recipe. Yummy
I always wash my "pre-washed" lettuce or spinach. Last time I bought a bag of pre-washed lettuce, there were tons of aphids on it. It took 4 washes. I started washing them after I found a roach in my pre-washed salad.
To make this keto, I would add a square of cream cheese or maybe some mozzarella cheese to thicken it. These could be added at the beginning, making it even easier. Also a little bit of cooked bacon bits at the end might make it even better? Not sure, but thank you for this recipe. It is one I will be trying very soon. I love the way you cook and have everything ready and explain so well.

Looks delicious! You could’ve used that whole jar of sun dried tomatoes and the rest of what you chopped spinach for all of that chicken! Heck, spinach cooks down to nothing, especially chopped, I’d a used the whole bag!
Nice job with the slurry! Cook a little pasta and serve this over pasta! Another hint…if your sauce would haven’t been too thick, pasta water would thin it out! 😉

One suggestion… stop second guessing yourself… go it, be confident. Flavor dense oil isn’t going to ruin it. Please don’t rinse things, live like a caveman and own that. You: how much garlic?!?! Everyone: still not enough!!! If you make a mistake… smile and cuss a bit.
