Cassandra seemed to only do the roots first when applying the pink color, not the bleach. That’s the only time I heard her say she was doing the roots first. I assumed this was so that the hair gets fully saturated with color, from roots to tips.

You never do the roots first because the heat from the scalp will cause the hair to process faster. You should only apply to the roots once your mids/ends have processed or have reached the desired color.
@nellybeans0368 the hair has to be blow dried or stretched first to allow for more even application. If you try applying lightener/colour onto the hair when it's already culred up, you're likely to have a lot of missed spots in the coils where the hair is bunched together. Also, because of the timing necessary, having the hair stretched/straight allows the application to go faster so it's more likely that the sections will process at relatively the same time as each other or won't be too far apart in terms of development. On shorter hair these factors mightn't matter as much, but this is the general consensus. Hope this helps you understand more.
I'm not a hair stylist, but I would say that doing the roots first will over process. You have to complete the entire head while the product is still sitting at the roots.
Not a licensed stylist..........but I'll give it a shot........because the heat from your head will cause hair cuticles to open and color faster......also can cause scalp irritation (burned scalp) andif left on longer ....... as well as damaged cuticles, possible hair loss (If you started from the scalp first) ...😬😬😬
