These where fantastic! One other thing I did was ad 1/2 cup mashed blueberrys and I also took them out 15 min into baking and sprinkled extra sugar then let them bake for 10 more minutes ❤

Making burnt/brown butter instead of just oil really made them tasty .. the cream lightened texture up and the lemon zest made the blueberry flavor pop …

I made these with chocolate chips an still coated them in flour, it seems to stop them from sinking to the bottom of the batter. I adjusted the recipe by adding 1/4 tsp of baking powder and 1/4 less baking soda.

It was great, but here are a few tips: -Sift all the dry ingredients-- doing so helps prevent clumps -Use fresh blueberries rather than frozen, as frozen will slowly melt and darken the color of the batter (my mistake, but more of a visual difference than taste) -I didn't use a full cup of sugar, because that would mean a third of the batter would be sugar, making the muffins too sweet. -If you use regular-sized cupcake tins, this makes around 16-18 muffins -Every oven is different, and not everyone has a thermometer, so the toothpick tip is really helpful -Also I'm not sure why, but my batter was way less watery than it was in the video. I added a bit more oil and milk, but be careful with consistency and adjust accordingly :)
You've definitely got me as a subscriber. I just did. I'm thinking that it would very easy to modify this recipe to almost any fruit. Larger fruit could be chopped up into blueberry sized chunks. Trying this recipe with chocolate chips and bits of strawberry could get really interesting & tasty. Oranges could be something of a challenge, but your flour trick would probably make it turn out alright.

Yes you can, but we prefer vegetable oil because it’s mild flavor doesn’t compete with the main flavor of the muffin and vegetable oil makes your muffins more moist than butter does.
For Lemon Blueberry Muffins add 2 teaspoons of lemon zest to your sugar and mix until fragrant, add 2 tablespoons of lemon juice to your wet ingredients. Vanilla Extract is normally twice as strong as vanilla essence, so increase the amount of vanilla essence.
No butter, using oil makes the muffins more moist, but if you prefer butter substitute 5 1/3 tablespoons for the 1/3 cup of oil, melt the butter and then let it cool for a bit before adding it.

*Ingredients + instructions:*
• Flour - 2 cups
• Salt - 1/2 teaspoon (just a pinch)

*New Bowl*
• Vegetable oil - 1/3 cup
• Milk - 1/2 cup
• 2 eggs

*Sprinkle some sugar onto the batter*
*Put in 375°F (180°C) oven for 25 minutes*

Yes you can, coat them in a little bit of flour and you may have to bake them for a few ( up to 5 ) minutes longer.
