Thankyou so much for this tutorial. I have been a subscriber and fan of yours for a while, but am only getting around to catching up again. I have a question. Please could you advise how to fill a silicon heart shape mould with chocolate? It's suppose to become a chocolate box and it came with no instructions. Do I just pour in the chocolate or apply with s pastry brush? As when I used pastry brush the inside was so rough looking in the inside when dried but exterior was smooth and shiny. I need to invest in one of these chocolate pots for tempering and keeping chocolate at correct temp and consistency... Many thanks Sir, and may God bless you and give you a long prosperous life!
This is what I do . Make sure the mold is clean. Brush non tempering Compound Chocolate or Temepered Couverture ( 32C) inside , when it is set pour the chocolate in and turn over for dripping out and place on a plastic sheet up side down . Place in the frigde for 5 minutes and take it out.

In a cardboard or plastic box NOT more than 24 degree room . place the box in the fridge for 15 -20 minutes before handling.

I use Cadbury, Ebony but Nestle Calypso / Puratos Carat , they will all will work
