A Day in the Life of a Quarantine Hotel Chef
A sort of tribute to my long-time workplace. I was part of the opening team of this hotel and this kitchen was my baby for a few years, until I moved on to different opportunities.
The hotel restaurant was shut down for a whole year during the pandemic. Now I'm back for a little while, reopening and setting it up, training the staff, hiring a new chef, reorganizing the system to fill the needs of a quarantine hotel.
It's been good reconnecting with old co-workers and old suppliers, but the food industry landscape is vastly changed. We're in a weird spot. We were one of the first industries to get hit by the lockdowns, and it's an ongoing journey, we're finding our way.
Although it seems quiet now, I'm hopeful that in the future our new normal won't be too far from how it was, those robust, dynamic kitchens of days past.

    Happy to find this channel! Great bg music choice! I recently was diagnosed and I am changing my eating...Heard about butternut squash. I roasted some chopped up but I wanted to learn more...so I searched...and poof your soup recipe popped out!     I had never made Orange 🍊 & Fennel Salad before ; this was so Yummy & Crunchy !!! Didn’t have Pistachios so improvised with Crunchy Roasted chick Peas & Added thinly sliced Apples; soooo good😋😋😋!!! Great Recipe💯

    Chef, you are the first person I’ve watched on UA-cam that embodies the love for cooking I don’t normally follow recipes but I plan to follow yours to a T, I only have two questions. 1) Why boil russets with the skin on? 2) Would browned butter work better? I hope you see this, thank you.
