Fish Oil Salt Pepper both sides Red onions garlic White whine. 1/2 cup Let it bubble and reduce by 30% 2 table spoons cold Butte t Quarter cup heavy cream
Made it for my mom on Mother’s Day. Also roasted some Brussels sprouts with mushrooms, miso sesame vinaigrette, and chili thread. Amazing to say the least. She said it was better than a 5 star restaurant 👌🏼
I made this tonight and when I first tried the sauce I literally had wide eyes 😯 It was so god damn good, and I'm so happy I made it. Thank you Sam and Max ❤️ !
tried this today. Made it my own in a way. Came out amazing!!!! used chicken stock (because I didn't have wine). didn't use lime because I forgot to get it while shopping. added grated parm right before turning off the stove. !!!! thanks for sharing.
Just made this recipe tonight with a couple of additions. First I, like you used vermouth only I added diced shiitake mushrooms to the sauce and it turned out really good. I also sautéed some asparagus as a side. Wifey is very happy. Thanks for the great recipe!
Immediately after watching Sam I went to the kitchen to make the same thing. It turned out fantastic, not to brag but I think I have a little better crust on my salmon (slow and low cast iron) and my sauce a little thicker viscosity.. Great recipe, I will be Sharing this with family soon.
wow sam doesnt have his obnoxious bad attitude and over the top reactions to the food after tasting it. This sam is a lot better than the new episodes.
made it last night forgot heavy cream, used milk, forgot dill, used targon chopped, did not have vermuth. it was wonderful. will add chopped asparagus in sauce next time as well. thanks
Just made this tonight and it was phenomenal. The sauce was subtle yet had a distinct character and complemented the salmon perfectly. Great video and recipe!
Looks damn good! I’m trying this TONIGHT! (Headed to the market right now.) I’m overstocked on shallots though, so I’m gonna use that instead of onions.
This popped up on my UA-cam feed today. I started watching and realized it was the first Sam the Cooking Guy video I watched, a couple years ago. I have been a huge fan ever since, and have probably 50 saved recipes of his. Great stuff!!!!
Sam, I'm a big fan of your cooking, tried several of your recipes and they work out great! My wife noticed I can now cook other dishes too besides previously only fried eggs...LOL
"Don't eat out too much" - I ate WAY too much fast food, and really needed to make a change. So, I pretty much stopped it, and also rid myself of soda. As of today, 12-21-18, I have lost 20 lbs. Sadly, i have not yet started to work out, but I am. Its truly amazing how much fast food and soda added to my unhealthy weight. I still need to lose about 20 more. I'm not rushing, i'll get there. I"m not on a diet, just eating healthier and I do this by cooking 99% of my meals. This salmon dish looks great! I"m going to make this over the weekend. :-)
Made this on Saturday and wow, just wow. My salmon came out very tasty and tender, just like it salmon should be. When I tasted the butter sauce I thought it tasted too much like vermouth. Perhaps I poured too much. But once I put it on my salmon the whole thing just blew my mind each time I took a bite. I served this dish with fresh homemade baguettes and white rice.
I'd eat this sauce on a leather boot, it is so good. Also, I'm patting myself on the back for finally making a white wine cream sauce without having it break. Thanks for a recipe that is so delicious and simple enough that even someone like me didn't screw it up!!
It WAS undercooked. You can see in the thick end. The thinner end where he showed was done of course. But the thick end would still be under cooked in the middle. Just needs a few more seconds. You can see it clearly by the color. And you should put the skin side down first to crisp the skin!
i love sushi, but if you are cooking salmon this is grossly undercooked. salmon is easy to tell when it is cooked, it should be pink and not opaque - if white stuff (albumin) starts coming off it - it is overcooked. a good temp is 120 Fahrenheit or 54c internal
Thanks for this. I used it on cedar plank salmon today. I cooked it outside on a butane burner while watching my Kamado Joe. I have made Sandefjordsmør a few times, but I broke the sauce once. This recipe was very forgiving. I kept it on warm for a while until the fish was done.
Just watched this video after my 18yr old son tuned me unto your channel. Love it! This recipe looks beyond delicious! Love the easy sauce recipe and salmon dishes are right up my alley. Thank you for sharing your recipe. Must try!! 😁
As many times as I've made cheese sauce(aka alfredo) which this basically is one thing I've learned is to never let the cream boil. Don't let it get any hotter than it has to. This will ensure that it becomes creamy rather than a thin liquid. Seems to also maintain the flavor.
2 for 2 of your recipes done. The 3 grilled chicken sauce and this recipe. Absolutely love it. Family said it is a keeper. Love the sense of humor too. Thank you so much!
my favorite fish meal!!!, mostly, I just put a pinch of ground black pepper, a pinch of salt, and a squeeze of lemon then microwave and it tastes great!!!
Not only tasty, but fun to make, it's rather simple and you can't screw it up so easily if you taste it throughout cooking. Though I would add a bit of salt and brown sugar to the onions to draw some moisture out otherwise you barely taste them.
I cook mine on medium, and I want mine fully cooked... about 4 minutes per side. He didn't coat the pan, I use olive oil. I love salmon, make it often in the Instant Pot
When I cook sockeye I enjoy cooking it on the bbq. I salt it over night to firm the meat then cook it skin side down until the fish forms a bead of sweat on it then flip it . Great vid . Cheers
Thank you! I made this tonight but substituted milk for the sauce. With garlic mashed potatoes and broccoli. Absolutely delicious! Why doesn’t UA-cam let you upload photos to comments?? Lol
Phenomenal presentation and recipe. We have fished the Pac NW and my kids commercial fished Alaska and your clean efficient style and process is delicious. Thanks!
Can’t wait to try this recipe. I’ve just subscribed and plan to binge watch your videos until I have a weeks worth of meal prep ideas. Does anyone know if this sauce can be stored and reheated or does it need to be made fresh each time?
In almost every video people have something to complain about but no one makes a video on how to “properly” (according to the annoying viewers) cook a salmon. Quit complaining and do something about it. Oh and btw. The salmon is not raw!
@@darquequeen2323 raw and undercooked are two different qualities of meat. That is undercooked fish. If you have ever eaten salmon and served salmon at a restaurant with reserved food standards, you'd know. If that was sent back i wouldnt wonder why , that salmon is undercooked in the middle and reaching its cooking point near the top. It doesnt take a fucking scientist lmao

Love the motto “eat better!” Cooking for yourself is the best and it’s really not that hard. Thanks for sharing!
i love how you make it feel like anyone can make this.
It's not that hard lol
Omg I just tried this recipe 🎉🍾👏🏾 thank you soooooo much. I felt like I was at a 5 star restaurant...and had me a glass of wine.
A glass? If you were at home and less than 50 ft from your bed you should have gone all out and had another 1/2 glass. Life is short!
It’s an oldie but a goodie, I’ve made this sauce multiple times and always fall back in this video, thanks 🙏 Sam
Can I ask what you use it on other than fish? Going to try making it tonight for salmon lol
Can I use dry dill
Paired this with Gordon's Mushroom, Leek and Tarragon pasta. AMAZING
😋
I've tried a couple times to make this and tonight it came out absolutely perfect! Incredibly flavourful!
I made this tonight and when I first tried the sauce I literally had wide eyes 😯 It was so god damn good, and I'm so happy I made it. Thank you Sam and Max ❤️ !

I love salmon. I tried this last night and came out great. I always broil my salmon a lil and then topped it off with the sauce. My wife went crazy

Ira Rather shallots sound GOOD👌🏾👌🏾👌🏾
I love this recipe !! It's not too precise in measurements but that's the beauty of it !!!
That looks perfect! Some people say that salmon is raw, but overcooked salmon will taste like wood.
Correct ! Had that yesterday... !
So those people never had sashimi before, what a sorry life
So true
@@dongshenghan1473 There's a time to eat it raw and a time not to.

Just fast forward.
Just made this alongside some quinoa and roasted asparagus... Just WOW. Thanks for the inspiration!
Tried the sauce, was great. Tried it by adding a small amount of white cheddar. was also amazing.
"Although I do find shallots a pain in the ass" -- this is why I love this guy's channel
Gonna try this tonight, thank you! Only change is to make the sauce in the pan you cook the fish in!
Looks amazing! Any substitute for the wine?
Tasmeera Chowdhury I think chicken broth? Lol as soon as he said white wine I was like 😱😂
Yes or veggie broth
I tried it last night. GREAT! Next time I'll try a little less lemon juice and a bit more dill. Thanks Sam!
This is what's for dinner tonight 😍 thank you for the recipe. It was very simple to cook 👩🍳

MC Bc white rice is perfect to paired with salmon!
Perfect Keto balanced sauce, I’m on it. Plus the salmon, doesn’t get any better. TU.

I made this the other day and it was amazing! I recommend keeping the skin on and scoring it! 10x better tasting imo
Can’t wait to try this. Thanks for the tip to cook the salmon 1/3 through to keep it moist.
Made this tonight and it was DELICIOUS! I ALWAYS fail at making salmon. No more!
I like this dude he's no-nonsense. Awesome 👌

It's undercooked at the thicker part. Salmon you buy at the supermarkets should never be undercooked due to parasite.

The salmon looks DELICIOUS !
What heat setting is you use on the stove ?
I made this tonight served over spinach, mushrooms and tomato bed with asparagus and your sauce. They ate it up. Thank you.

Best cooking channel on UA-cam. Sam is hilarious and everything ive imitated has been outF’instanding. .
Hi Sam I just made this and it is soooo good. I feel like it was almost magic. I doff my hat to you kind sir.
Looks delicious!!!! Do you think I can replace the heavy cream with a dairy free version??? Coconut cream, maybe???
you know the food's fire when they talk with their fork lol
I thought he was making beurre blanc sauce at first. Beurre blanc is so good on salmon😋 I'll have to try this recipe.
"...Pardon all the nonsense, it's just damn good!" Now we're talking!
I really enjoy the out door look the house needs more lighting
Amazing recipe, made it today and added mushroom to the delicious sauce. Thanks for the video. :0)
Did you also do dill? I don't have any right now, mushrooms, and everything else.
assyrianbookta Yes, I had the dry dill weed spice and threw some on. Didn’t have fresh herb that’s always better.

Is the salmon cooked on low, medium or high heat. Same for the sauce?
I cook mine on medium, and I want mine fully cooked... about 4 minutes per side. He didn't coat the pan, I use olive oil. I love salmon, make it often in the Instant Pot
I make this every week, it's really good.

There is nothing more magical than a medium salmon. Perfectly moist and delicate

What would be the alternative for white wine?
Vermouth
Thanks very simple and healthy cooking.
Where's the skin? Always leave the skin on salmon man. It adds way more flavor and includes most of the omega 3s.
Lololol. Light sauce need no skin.
Mark DeVries Correct, 💯
I prefer the skin on mine.
Crispy salmon skin tastes great, but sometimes our grocery store only has skinless pieces for sale 😟
Agreed! Thank you! The best part when the skin is crisp!!
Phenomenal presentation and recipe. We have fished the Pac NW and my kids commercial fished Alaska and your clean efficient style and process is delicious. Thanks!
Hi Sam
What can I use as the wine substitution?
Yeah agree. I need to know to bcs I can't drink wine
Red wine
glad that you have a cookbook! buying from Amazon. thank you!! :D
Made this last night. My salmon had a bit more crust on it but that sauce was the key! So delicious!!! I'll be putting that shit on everything!!!
Addictive 🤓

This is not medium rare...
It's medium RAAAAW!!
If you don't want to use vermouth then just add the cream then after you added the cream you add the butter so it'll emulsify
Looks good but I would have seared it more. I like different textures
Salmon is pure potential. Only good things can come out of a fine cut of that thing.
