Pie iron peach upside down cake & cupcakes, baked in a mess kit. Two recipes for campfire baking!

  • Our peach tree has blessed us with another heap of fat, juicy gems. So I took a couple with me camping, to roast in the pie iron, with some cake batter. While I'm experimenting with cake batter, I thought why not try and bake some in a soda can, in the mess kit?
    Both are entirely experimental, and equally delicious!

    this is why i keep the ovaeasy powdered egg around. make up mixes under 1 egg requirement. if possible try making them with peach juice instead of water.

    Next time you're feeling adventurous, add a splash of Bourbon or Whiskey. If I go with a Whiskey, I use one of the honey flavored ones but you really can't go wrong.

      The one I made at home mayyyyyy have a touch of bourbon in with that sizzling butter 😉 Love the idea of using a honey-flavored one -- boy howdy! 😋 Also maybe an acceptable use for Fireball 🤔

    Anything with peaches 🍑 looks good to me. Well done 👍 ( Bonsai wire tightly coiled up on the pie iron handle would keep that wondering 🪝 in place.)

    I’m learning so many tricks from you, I’ve never seen a pie iron before seeing your videos. I need one! Hope you linked your fav one as I see how annoying that link could be when it slides. Also I’d love it if you made a little ebook with all your recipes. I’d so buy it!

    if its not too close to the fire, you might be able to just put a ziptie on the pole so the latch doesn't slide down farther.

    Love your videos, you're very inspiring. I'm going to try to make this using canned peaches. My peach tree is 3 years old and still no peaches and it's supposed to be self pollinating, I'm soooo disappointed. Anyway, it looks delicious. Thanks for your videos.

      That's so weird! I'm pretty sure that all peaches are self-fertile, and at 3 years, you totally should have gotten fruit by now. Possible that it was mis-labeled or mixed up at the nursery?

      @@ShoestringMartha it was bought at Moons nursery here in Mesa and it did have 2 small peaches on it at that time. I went back and they gave some kind of fertilizer. Maybe next year, we'll see.

      This was so delicious! Also pared peach slices in red wine. Let sit for about 1/2 hr....great way to start or end day. Thank you Stella.

      It's hard to say. It used to be the Coghlan's (I really liked the latch at the end of the handle), but I think they changed the pan design, to weird, stepped-down edges.
