One of my favorite memories of my time in Spain. It is a place that once you've been there your love for it never fades. Four decades later I still dream about going back.
Absolutely fascinated and pleased to know that Spain/Madrid is the 2nd largest seafood market/consumer in the world after Japan! That means there's a plethora of Spanish seafood recipes to dive into and I am ready for it!

I tried this dish with a German couple and they mentioned this was a Spanish dish and learned how to make it there. I am Mexican and I would order “camarones al ajillo” and it was completely different - the taste was just not it! I’m so happy I found this, can’t wait to make this fabulous dish! Thank you so much!!

Lived in Spain in the mid 70"s and my wife and I would visit the Casa de Gambas near Plaza Major in Madrid. This brought back many fond memories of our time there. I will try this recipe as soon as I can. Thanks for sharing...

Recommend deveining the prawns. Makes for a much better eating experience.
Totally agree with you, and here un Spain it’s unusual to see the prawns without tail, but it is optional. But nice recipe and so much easy!

Hi Omar, in the city Mijas I have experienced several restaurants using white wine in their Gambas al Ajillo (it's written in their menu).
I want to try adding white wine to your recipe, but I don't know when I should add it or should I let the alcohol evaporate?

How long do you cook tiny prawns that are fully submerged in the oil??
As soon as they hit hot oil, they will turn pink and done. Maybe lower the heat so the garlic/chili flavor has a chance to infused in them.
(The thing with shrimp is the longer you leave it there the tougher it gets. Nothing will happen but when they are overcooked they shrink more cause all the water is evaporating.
If you are planning to do a lots, then I would do one small batch first- like a handfull. Then another one and another, so you get more learning experience an a good idea how long they need hit that right spot.)

What’s the difference between this and gambas pil pil?
The name pil pil on gambas it's misleading. Pil pil it's a recipe that you can only cook with a few white flesh fish, such as cod, monkfish... I don't know when and why some people and restaurants started calling it like that. I hope that explains

Hola Santi, la realidad es que hay muchisimos videos fantasticos en castellano sobre nuestra cocina. En cambio en Ingles hay muy pocos por no decir casi ninguno, especialmente cocinados por un cocinero espanol. Mi mision es dar a conocer nuestra gastronomia fuera de nuestras fronteras de ahi que tambien es importante que se haga en el idioma mas universal. Un abrazo!

Leave the garlic longer to slightly colour and you'll get a much better taste

Hi Siggi, the decision to devein shrimp is basically a matter of personal preference and aesthetics, not hygiene, and the vein is not harmful to the human body if eaten. If the vein is visible through the shell and meat, and if you find the digestive tract unappealing and unattractive, then it makes sense to remove it

if you cook it for someone, take the time to clean out the intestine vein. Some people get disgusted by the veins.
