  • Seven-Grain Honey Bread
    Yield: Three medium round, or three 8-by-4-inch loaves
    1 ½ cups or 375 g boiling water
    1 cup or 160 g seven-grain cereal
    1 ½ tablespoons or 18 g active dry yeast
    Pinch sugar
    ¼ cup or 37 g warm water (105 to 115F)
    ¼ cup or 80 g warm buttermilk (105 to 115F)
    ⅓ cup or 100 g local honey
    3 tablespoons or 42 g vegetable oil
    2 tablespoons or 30 g unsalted butter, melted
    3 eggs
    1 tablespoon salt
    4 ½ to 5 cups or 670-750 g all-purpose or bread flour
    1. Poor boiling hot water over seven grain cereal.
    2. In a small bowl mix dry yeast with water and set aside.
    3. In a big bowl mix buttermilk, honey, vegetable oil, melted butter, egg and salt. Mix it well.
    4. Add flour and mix it well.
    5. Bring the dough on a floured surface knead for 5-6 minutes. Put dough on a greased container and let it rise 1-1 ¼ hour or double.
    6. Shape the dough and let it rise for 30-40 minutes. 30 minutes prior to putting the dough in oven heat the oven 375F.
    7. Bake 375F for 35-40 minutes until golden brown. Let it cool down before slicing it. Enjoy.
