I prepare ghavne on non-stick tawa and get profuse jaali. 1. Very thin batter 2. very hot tawa while placing ghavne and 3. small quantity but wel spread oil are three key points to prapare nice ghavne. It can very well be fried from both sides, in that case it is NOT covered with lid (though traditionally it is not). Ghavne itself is known as "Neer Dosa" in Karnataka.
