So glad I came across this - I've lived around these for years and never knew how they work.
That's the neatest model I've ever seen. I've developed a fascination with the operation of grain elevators and feed mills in recent years.
Fortunately I had the experience of working in a very similar old elevator. It was pure enjoyment looking at how it worked and climbing inside. It was a sad day to hear it was torn down.

Isn't it a conflict that the person testing quality is also the buyer ? Shouldn't it be neutral? Are there situations where the driver is like "hell no" after hearing the quality report but the grain is already unloaded?
This is an awesome model.
Not sure how it works in Canada but if the farmer disagrees with the grade he can get a sample sent to a federal grain inspection office which will issue a official grade.
More often then not the producer sends samples ahead of a delivery to find out the grade of their grain. Samples are super important so everyone knows the quality of the grain although this can change when the load is dumped at the elevator for a number of reasons.
We have a sampler it is a moisture tester that cannot be rigged
