    I like your technique. That bread and sandwich looks amazing. Thank you for bumping up my sourdough game. I have a sourdough starter that was apparently brought over from Italy that's generations old. I've tried so many techniques, which came out good, but your stretch and fold method makes the most sense out of everything I've tried. Time is money and your bread looks like money. Thank you Tia

      Thank you! I do prefer this method of stretch and fold over the other.
      That sourdough starter sounds amazing, it's wonderful to have one that's been passed down. I bet it has a nice strong flavor filled with so many of the aromatics of Italy.

    It needs to beat on slow to beat flour in and then med for the long time

      Gotta stretch and fold. Though I wonder if I could just knead using the mixer 🤷🏾‍♀️

      @@TiaFaith Nah, your stretch and fold game is what makes that bread fluffy. I'm gonna try your method with the next loaf I make.

      Yes you can but not one hundred miles per hour. Knead til it forms a ball and starts to climb up the hook. Make sure your mixer don't get hot. And don't add more flour during the knead! Should be ok then. Good luck. 🤗
