Your recipe is probably very similar to the original "Bit O' Honey". The candy I remember growing up actually started out quite hard, and became soft and chewy in your mouth. I believe over the years they have replaced a lot of the sugar with corn syrup, so today the candy is easily squishable in your hand. It used to be quite hard. That change of state from hard to chewy was one of the unique things about the candy, and the initial hardness made it last a lot longer.
trublgrl to get a firmer texture, take the temperature closer to hard crack. Be sure to adjust for altitude if needed (if you aren't close to sea level) by calibrating your candy thermometer.
I liked that about BIG HUNK bars
We'd slam the unopened package on a counter top, shattering the candy into bite size, then suck on those until they warmed and softened

It's always great to see a young adventurer in the art of edible creations. I like the fact that your recipe is listed as using only four ingredients, because I have found that basic recipes can be the most influential to people trying to learn. The recipe you have there is a close formulation to making home made "energy bars", which are most attractive to hikers, campers, and athletes.
I'd love to know that recipe. I don't eat candy. Would love to save money on all the energy bars I'm eating & make healthier ones by adding my own ingredients to them. I can see the possibilities now...

Very interesting recipe.
Just made 2 batches. I tweaked the recipe a bit. My first batch I did 3/4 cup powdered milk. 3/4 cup almond flour. Also I only heated it up to hard ball(260°F). Second batch same as before, 3/4 cup powered milk and almond flour. Before adding I wisked in some pure almond extract. This batch I only heated up to Firm ball(250°F). I also used about 3.5 ounces of almond paste in both batches. Thanks for the video.

Glad to find a recipe that didn't say to use peanut butter, too. The ones that showed up online all called for PB, which didn't make sense because the package of Bit-O-Honey says it's mostly honey and almonds. 🙂.
Do you think almond butter would work in lieu of the paste? I'm not sure where to find the paste, locally, but they have almond butter in our stores.
Also, since Bit-O-Honey is a lot like taffy, have you tried to pull it like you would taffy? Just curious about that, too.

So... I've had some issues with candy making. I have a nice digital thermometer that reads accurately (it reads at 211 when water boils). But I've noticed that when I try to bring sugar to a hard crack stage at 300F, it starts to caramelize at ~285F, which I don't want when making certain candies. The pan I'm using is pretty hefty, and I try to swirl the pan occasionally to prevent any hotspots, but caramelization happens anyway. Do you have any tips for this dilemma?
Can you make lemon squares?
Up north ive eaten it with a consistency of pudding and jell mix for the lemon filling.
I live in the south and cant find a good recipe for lemon squares.

I have not tested the recipe, but eyeballing it looks like 1 cup white sugar, an 8 oz or half pound bear of honey, 1.5 cups powdered milk, and 2 oz (about a quarter tube) of almond paste. I imagine 1 oz almond flour or almond meal or just almonds you whizzed the heck out of in a food processor can be substituted for the 2 oz almond paste if need be to get an equal amount of almond flavor and texture.

I have never heard of anyone using an infer red thermometer in cooking. How accurate is it
It is actually really accurate. You have to be careful because it only measures the surface of the food, so it isn't good for all recipes (like meat, still would use a probe for that)

Oh honey! Please go get yourself a silicone pan! It will change your life! No foil needed and you can just turn the pan wrng side out to pop the candy out!

Ummmm where is the peanut butter ? Because the bit O honey has a middle peanut butter crunchy taste. Seems like you didn’t make it right.
It does not have peanut butter in the actual Bit-O-Honey. If anything, the candy may use almond butter. The back of the package says it's honey and almond pieces. I read reviews from people who tried it with recipes that use PB, and they say it's not the same at all and tastes like a power bar. Anyway, just saying...🙂
You definitely need crushed almonds in this recipe.
You are thinking of Mary Janes. They are molasses taffy with a peanut butter layer inside.
