I'm almost 70, and I remember coconut brittle from my childhood, and the white coconut you used today looked like what was used way back then. That was the best brittle I've ever eaten, and sadly, never saw it again.

At Christmas time, back in the 40's and 50's, my grandpa made peanut/coconut brittle. He called it PECO Brittle. It was delicious. He had a huge copper kettle, huge gas burner, and big wooden paddle. He'd pour the cooked mixture on a long marble table with a wooden edging to prevent overflow, then break it into pieces when it was cooked. This brings back some great memories.

Morro’s Nut House in Lloyd Center in Portland Oregon in the 1960’s. They made their brittle in the front window. They used the large flaked coconut and added cashews; the brittle was the same color as their peanut brittle. It was fabulous! I’m getting close to recreating it myself

This year, I was using a long candy thermometer(waiting on a new one to come) making jelly. It flipped out, hit me in the forearm but I couldn’t stop stirring. That was just in the 200s.
