I wonder if adding in a nice fresh sweet onion would work well in this during the slow cooking process, I'd imagine it would add even more great flavor.

I make this often, I call it shredded Italian beef. I also add giardinera, and serve it on crispy rolls.
Yep very similar except this one uses a packet of Ranch Seasoning where Italian Beef you use a Italian Seasoning.

This recipe you can use 2 to 4 pound pot roast.
