As is the case with camel, it is realllly good braised until the point of drying out.. there is 0 barn flavor and a subtle nutty flavor (wich comes mainly from their fat) Camel Hump is enjoyed dried also wich enhances those nutty tones

Armadillo have a gland in the inner thigh that smells exactly like you described. If you remove that while butchering, it does actually taste like quality pork. I'm kinda surprised you didn't come across that in your research.

It would result in undercooked, rubbery meats. Exotic meats might have specific preparation needs due to their leaness, potential parasites, unique textures, etc.

ive had camel and snake before and it was very good. its thoroughly cooked though, applying steak conventions to a lot of these animals isnt the way. the snake was roasted on open fire and i dont know what the marinade was but it was damn good

Elk, deer, bison, moose all typically enjoyed and preferred raw… but yeah lots of those cuts shouldn’t have been raw I get what you’re saying. Some were stewed and they still thought it was nasty.
Food is not “supposed to be cooked” you can eat all meats raw it will just not taste as good. When you cook meat you cook out most of the meats micro nutrients

The 1st time I tried groundhog it was fresh grilled same day. Super gamey, tough, and greasy. Next time it was soaked overnight in Salt water, rinsed thoroughly, soaked again for a 4 to 6 hours in buttermilk, rolled in seasoned flour and cornmeal, and deep-fried in a cast-iron pot over open flame. That was excellent and the only way I will fix it now.

I work at a wild game burger restaurant in Louisville KY, so this was veryyyyyyyy cool to see. We have antelope yak elk rabbit venison, etc. 13 different meats. Come see us if you're in town and see this. Our kangaroo burger is supposed to be the best burger in the city 💯
I think most of these would be better if they were prepared properly. I've had frog, rabbit, shark, ostrich, llama, camel, alpaca.... and enjoyed them. I'm guessing most of these would be good if they knew how to cook them.

@@MulletDestructur Normally, freezing of the meet below a certain temperature for a long enough time kills most parasites. However, with game meat that is not always the case. Some of those wild parasites are resistant to being frozen. So with medium rare game meats you do takes your chances.

Nice to see people this day and age happy to try different food, one thing though: I understand each meat needs a slightly different cooking to render their best, but when you over marinate some and under cook others you do not enable your taste buds to deliver a fair verdict.

Galapagos turtles went extinct because they were so delicious the explorers couldn't stop eating them. My guess is that you need to turn them into a stew or soup to get the best flavor out of them, as well as the best texture. Like brisket or another hard piece of beef.
The Galapagos Turtle or actual Tortoise, you're incorrect they're, are not extinct. They're endangered around the board. Some of the sub-species are extinct, due to non-human hunting factors and competition from invasive species along with human interference. They're still alive today and in various zoos, look them up, you should go visit them, they're quite interesting animals.
Man I absolutely love the concept but I’ve got to say, I’ve tried ostrich before, and I would guess it was cooked passed medium rare because it had a red meaty kind of flavor and it tasted really good. Chicken can’t be cooked medium rare because it’s too small the bacterias might penetrate it, also the cleaning and butchering technique for small animals might have effect. For meat that big usually parasites are the one you should be concerned about
Being from Australia, you can buy over a pound of kangaroo from a supermarket for 10AUD which is about 6.50USD being cheaper than beef on most of occasions, so 300AUD for a pound is really crazy to me 🙂🙂

It's funny that the Chinese words for frog and chicken are so similar, seeing as how chicken is what people tell you frog legs taste like. That's probably why they gave the frog that name. In fact, based on what Max showed here, the Chinese word for frog IS the word for chicken, but with the word for rice paddy before it. Frog is, therefore, rice-paddy chicken according to the Chinese. That's appropriate and sort of comical, since a rice paddy is a great place for a frog to live.

And the characters they use in writing can be pronounced differently when used in different words. It's quite possible for them to have given frogs and chickens different names at first, and then just assigned characters that mean "rice paddy chicken" when deciding how to write the word "frog" based on it kinda tasting like chicken. Now, I don't know if this is what actually happened, as I don't speak any of the Chinese languages. I had to look up that character for "rice paddy" in a Japanese kanji textbook to know what it means. But I'd also like to point out that the Chinese people are not squeamish about eating pretty much anything they can get their hands on. The idea of them discovering a new animal, eating it, and then naming it based on what it tastes like and where you can find it, makes total sense to me. That's not unheard of in the West, either. We have a popular brand of canned tuna called Chicken of the Sea, for example. Not to mention Rocky Mountain oysters...

I'm an Aussie. Kangaroo is really great! It's much more healthy than beef.... It lacks fat, that beef has, it's still an amazing protein and is very affordable. 💥💪 The tail is actually a delicacy.... As it has marrow.
next time you do a vid like this pls look into the local ways of cooking the meats and try them like that to really get the real experience of the meats.
Very interesting video. But I have to say I think what you mentioned a bit later on in the video is very true. Preparation is key with a lot of these meats. If you want a nugget there are reasons why MacDonald doesn't sell turtle nuggets right. If turtles were a good option that would have just been a thing already. I would love to see a second episode of this while preparing them culturally current. Also as an example I am from South Africa. I went to Namibia a few years ago and during my time there I got the opportunity to try Gemsbok/Oryx. Still to this day with eve. Having Wagyu last year. It is my second favourite meat I've ever had. And no Wagyu is not first by a mile 😂 warthog for me has been my favourite meat and I hunted and prepared that warthog myself. I do really enjoy the taste of Gameness though so my palette might be an exception but my whole family agreed with both the Gemsbok and Warthog when we had it. I have never had Zebra though and because it's so close to a horse I probably won't but after your video I might just try it. Also just something else to consider is the pallets tasting these items. Might be a good idea for like a future video to bring in some extra people that like to eat these items a lot (my hand is up for African animals😂) but it would be interesting to see if people like from Africa would give a different discription to the food eating different to you guys from overseas. Just a thought 😊 but I did enjoy the episode max well done.

I live in South Africa and ostrich is available in most supermarkets nowadays, it recently got a lot better due to better butchering and storage practices improving. Yes you cook it just like steak, medium/rare with a crunchy crust and its delicious, no gamey iron flavour or aftertaste at all! You need a better dealer😂

I work at a wild game burger restaurant in Louisville KY, so this was veryyyyyyyy cool to see. We have antelope yak elk rabbit venison, etc. 13 different meats. Come see us if you're in town and see this. Our kangaroo burger is supposed to be the best burger in the city 💯
I think most of these would be better if they were prepared properly. I've had frog, rabbit, shark, ostrich, llama, camel, alpaca.... and enjoyed them. I'm guessing most of these would be good if they knew how to cook them.

@@MulletDestructur Normally, freezing of the meet below a certain temperature for a long enough time kills most parasites. However, with game meat that is not always the case. Some of those wild parasites are resistant to being frozen. So with medium rare game meats you do takes your chances.

Nice to see people this day and age happy to try different food, one thing though: I understand each meat needs a slightly different cooking to render their best, but when you over marinate some and under cook others you do not enable your taste buds to deliver a fair verdict.

Galapagos turtles went extinct because they were so delicious the explorers couldn't stop eating them. My guess is that you need to turn them into a stew or soup to get the best flavor out of them, as well as the best texture. Like brisket or another hard piece of beef.
I've used softshell water turtles for a stew. It's an old time Florida recipe called Cooter Soup.
The Galapagos Turtle or actual Tortoise, you're incorrect they're, are not extinct. They're endangered around the board. Some of the sub-species are extinct, due to non-human hunting factors and competition from invasive species along with human interference. They're still alive today and in various zoos, look them up, you should go visit them, they're quite interesting animals.

Man I absolutely love the concept but I’ve got to say, I’ve tried ostrich before, and I would guess it was cooked passed medium rare because it had a red meaty kind of flavor and it tasted really good. Honestly I’ve never personally cooked ostrich before so I wouldn’t been able to give anyone any tips but thank you for the video anyways, I really like the concept. Well done ! ( as always )

Beaver is an traditional Lithuanian meat if prepared right it’s really really good. The tradition came from the early 14 hundreds the rich people declared them as fish so they can eat them while fasting. So maybe try them in another way and it will change your mind ❤

It was cooked medium rare when I had it at a restaurant. I understand it gets tough if overcooked. Apparently, ostrich doesn't carry salmonella.
Chicken can’t be cooked medium rare because it’s too small the bacterias might penetrate it, also the cleaning and butchering technique for small animals might have effect. For meat that big usually parasites are the one you should be concerned about

Being from Australia, you can buy over a pound of kangaroo from a supermarket for 10AUD which is about 6.50USD being cheaper than beef on most of occasions, so 300AUD for a pound is really crazy to me 🙂🙂

Frog legs can be S tier but sometimes they are fishy I've heard. They're not fishy in cold weather climates so I think it's where you harvest them.
It's funny that the Chinese words for frog and chicken are so similar, seeing as how chicken is what people tell you frog legs taste like. That's probably why they gave the frog that name.
In fact, based on what Max showed here, the Chinese word for frog IS the word for chicken, but with the word for rice paddy before it. Frog is, therefore, rice-paddy chicken according to the Chinese. That's appropriate and sort of comical, since a rice paddy is a great place for a frog to live.

They must've had a spoken language before they had a written language, right? And the characters they use in writing can be pronounced differently when used in different words.
It's quite possible for them to have given frogs and chickens different names at first, and then just assigned characters that mean "rice paddy chicken" when deciding how to write the word "frog" based on it kinda tasting like chicken.
Now, I don't know if this is what actually happened, as I don't speak any of the Chinese languages. I had to look up that character for "rice paddy" in a Japanese kanji textbook to know what it means.
But I'd also like to point out that the Chinese people are not squeamish about eating pretty much anything they can get their hands on. The idea of them discovering a new animal, eating it, and then naming it based on what it tastes like and where you can find it, makes total sense to me.
That's not unheard of in the West, either. We have a popular brand of canned tuna called Chicken of the Sea, for example. Not to mention Rocky Mountain oysters...

I'm an Aussie. Kangaroo is really great! It's much more healthy than beef.... It lacks fat, that beef has, it's still an amazing protein and is very affordable. 💥💪 The tail is actually a delicacy.... As it has marrow.

Very interesting video. But I have to say I think what you mentioned a bit later on in the video is very true. Preparation is key with a lot of these meats. If you want a nugget there are reasons why MacDonald doesn't sell turtle nuggets right. If turtles were a good option that would have just been a thing already. I would love to see a second episode of this while preparing them culturally current. Also as an example I am from South Africa. I went to Namibia a few years ago and during my time there I got the opportunity to try Gemsbok/Oryx. Still to this day with eve. Having Wagyu last year. It is my second favourite meat I've ever had. And no Wagyu is not first by a mile 😂 warthog for me has been my favourite meat and I hunted and prepared that warthog myself. I do really enjoy the taste of Gameness though so my palette might be an exception but my whole family agreed with both the Gemsbok and Warthog when we had it. I have never had Zebra though and because it's so close to a horse I probably won't but after your video I might just try it.
Also just something else to consider is the pallets tasting these items. Might be a good idea for like a future video to bring in some extra people that like to eat these items a lot (my hand is up for African animals😂) but it would be interesting to see if people like from Africa would give a different discription to the food eating different to you guys from overseas. Just a thought 😊 but I did enjoy the episode max well done.

I live in South Africa and ostrich is available in most supermarkets nowadays, it recently got a lot better due to better butchering and storage practices improving. Yes you cook it just like steak, medium/rare with a crunchy crust and its delicious, no gamey iron flavour or aftertaste at all!
