You can eat it with flaky soft fish and miso soup with some-- ahem-- mashed up roasted pumpkin and sweet potato.

My mother often cooks this. but she put the glass noodles into the eggs before steaming. You can put anything u likes in my opinions. This is kinda similar with japanese steam egg (chawanmushi) they use broth and put some meat or shrimp

I decided to try this recipe, and I was able to eat it. It has such a good taste with a little of sesame oil and scallions. Thank you. (The cooking time was too short for me, I had to add 10 minutes to cook it, maybe because in your video, you are putting the plate in what seems to be a wok, so it was closer to the heat source, I think.)

Yes! This is the simple basic version of the Japanese 'Chawanmushi'. That one involves dashi flavouring and other optional ingredients like Shitake mushrooms dropped in the bottom and maybe a shrimp-- usually made in individual ramekin pots for breakfast sides. I'm getting hungry now. 😋

I cooked them until I saw the center of the dish become solid and not runny… so I can’t give you an exact time but I eye balled it and got it to work, they are just eggs after all ☺️
Usei dois potes iguais um com os ovos batidos e outro com água na mesma proporção dos ovos! Deu super certo! Ficou uma delícia! Só coloco azeite e queijo ralado no final! Como todos os dias no café da manhã!

I didn't even realize the goal was to make it without pockets. I used to love it when they had as many as possible because I loved the texture, I always asked my mom as a kid to make them extra bubbly.
So i try it just right now … after 60-80 minutes on heat 4 at my oven it worked … I will see if it really completely stocked 😊 the first look after 60 minutes was really really good… I give it another 15 minutes and than it hope it’s ready

My basic recipe, one large egg, beaten with 1 cup of seasoned bonito broth, splash of soy sauce and a 1/2 tsp of sugar and a good shake of white pepper. Mix well. Place in a slightly oiled bowl then steam in a pot of about 1c only of water, covered. Medium heat, do not rush the cooking on high. Not springy like this egg dish. It’s more soft, like a pudding. You can also drop a shrimp or mushroom in it before steaming. I use a coffee mug for individual servings. Delicious with a few drops dark sesame oil and soy sauce to taste.

其實真的不必這麼複雜。
蒸蛋(水蒸蛋)只要抓好比例並且記得蓋上蓋子,就基本不會失敗了。
平均一顆雞蛋加入150cc的冷或溫高湯,只要不讓雞蛋熟化就沒有問題,完全不必特地去量溫度什麼的。
大概三顆雞蛋以內,都只需要用蒸米飯的時間就足夠蒸熟了,再多會蒸老。
雞蛋比例:
蛋:高湯=
1:150
2:300
3:450
(這個比例是軟嫩型的,如果喜歡吃稍有彈性一點的,一顆雞蛋比例裡面的高湯可以酌量減少約20cc左右,自己抓一下量就可以了)
蒸之前在裝雞蛋液的容器上面加個東西蓋住,避免蒸氣成水滴落在表面,然後再開始蒸,就可以了,火力記得不要太大,然後就是等吃美味的蒸蛋(水蒸蛋)。
如果喜歡後面淋上醬油,那麼高湯記得不要加太多調味,如果沒有要淋醬油,則切記高湯要調的稍鹹一點點,蒸出來的蒸蛋滋味才足夠哦!
還加鴨蛋量水溫……那些壓根就沒有必要啊……
