What you're eating is a typical brazilian food you encounter in every corner in Brazil, but also very popular in Argentina. We call it "churrasco" (literally translates to barbecue). The "bread balls" are called Pão de Queijo. The meat you ate after the first ribs are probably "Picanha", which is one of the preferred and most premium cuts of meat in Brazil. Pao de Queijo is also a staple. The sausages are Linguiça Toscana. The salsa-like "sauce" seems like a modified Vinagrete, which is basically made out of 2 parts onions, 2 parts tomatoes, 1/4 bell peppers, half a cup vinegar or lime juice, a cup of good olive oil, and salt & pepper to taste. Vinagrete is great to balance out fatty cuts of meat.

The circular cut is picanha (top sirloin) the one you referred to as brisket is flank stake or skirt stake. Only coated in rock salt and cooked over charcoal. I manage a Texas de Brazil !

I’m happy for you! Next time try feijoada, I think you’ll love it.
I used to work at one in New York, it's really good! The salad bar is also really great but most people seem to pass it up. I was a hostess and the servers would sneak us up cheese bread and we'd be eating them all throughout the night, so good!
you know what's the best part about this? if you come to brazil you'll see places like that literally everywhere. might not be as fancy as this one, but even the cheaper ones have banger food. it's such a big staple of brazilian culture.
I’m from San Antonio Texas baby and I’ve been to a couple places and they have a card with a green side and a red side and whenever ur ready for the meats, you put the card on the green side. The meats are to die for they are actually AMAZING.... it’s just a little pricy but definitely worth it. AWESOME video Ben as always keep it up man 🔥🔥💯💯💯

Lamb is gamey which gives it a bitter taste and I really enjoy it with mint jelly because it helps cut through that and adds a freshness to it without being too sweet

Grew up in New Mexico very used to those heavily flavored cuts, me personally I stick to the brisket and ribs with some kc sauce but all those foods are looking mighty fine.
