As someone who has cooked hundreds of Mexican dishes, I can attest she did everything you can do for that full flavor recipe. It would also be amazing to stick some mango either in that salsa or on top of the pineapple and let those juices drip!

Hummm...I have been to Mexico many times, street tacos are pretty straightforward, never have I seen that sauce, the goodness for us was the homemade tortillas right there on the spot with the barbecue meat..just crispy very thin stacked meat..
I would like to slow smoke using this recipe. We made this before I'm not a big fan of the char, also the puerco came out dry, not juicy. It's also possible to use a vortex in the kettle grill, that would work just as good if not better, maybe throw in some wood chips for some extra smoke flavor. Just my thoughts.
So many questions, lol. What is "ground onion"? Is that the same as onion powder? And "Mexican oregano"? Can I substitute plain oregano? And can I use ground annato or do I have to use the paste?

We bought a Rotisserie for our Weber kettle from Cajun Bandit. It's been a lot of fun to use. Tacos al pastor was one of the first things we did.

Due to the high acid content, i would recommend glass or ceramic vs. A metal pan for the marinade process.
