  • An easy and quick recipe for making chicken biryani with home made masala in Instant Pot. I’m sharing not one, but two methods to make this chicken dum biryani in instant pot: Using pressure mode, and using rice mode.
    The first method makes a perfect layered biryani but takes a little bit of time which is well worth it though.
    But if you want an amazing tasting Biryani in under 30mins I would go with the second option. Especially if you follow my make-ahead tips & already have marinated chicken in the fridge. Perfect for dawat preparation or meal preparation.
    Biryani is probably the most popular food when it comes to Indian/Pakistani cuisine. There are many types and everyone has their own versions of them. Some like their Biryani with Aloo and some without. Some like Spicy Biryani whereas some like it mild. To make your own perfect biryani, you can either use my Home Made Biryani Masala or use your favorite mix. Simply follow the steps and you shall be making biryani in no time.

    I wanted to check pls if its 1 1/4 (1.25 cup) or 1.3/4 cup water (1.75 cup) Thank you so much 🥰

      i used 1.25 cup since there was already 1/2 cup water in my gravy from pressure cooking. If there is no liquid then 1.75cups for 2 cup of pre soaked rice. I hope that makes sense :)

    Found the method-1 after lot of search. There are many video about method-2 but I prefer rice without starch and not sticky. Marinated chicken now. Fingers crossed for tomorrow. Thanks for the steps.

    chicken marination:
    - 1.25 to 1.5 KG chicken
    - 1 tbsp ginger & 1 tbsp garlic paste
    - add 2-4 tomato at pressure cook time
    - 1/2 cup yoghurt
    - 1/3 cup fried onion
    - biryani masala
    - one large lemon sprinkled
    - marinate for minimum 2 hours
    rice:
    - 3.5 cups of rice, washed & soaked for 45 minutes
    - add rice to boiling water, boil till 80% boiled (usually in 4 mins on high heat)
    cook:
    - put instant pot on sauté mode
    - 2 tbsp oil
    - zeera
    - add marinated chicken
    - fry for 1 min not more
    - not put on lid and turn on seal mode, put on high pressure for 5-6 minutes (if more needed later, add 2 more mins)
    - do QUICK pressure release (not natural)
    - put instant pot back on sauté mode and bhoon the saalan till oil separates (usually for 30 minutes)
    - add 1 to 2 tbsp oil now
    - add salt and taste according to your liking

    I've seen many variants of Biryani and have personally tasted a lot of Biryani. I've been a fan of this simple yet complex.recipie,.coz due to the prep method and the order.in which one ingredient is added over the other. I see you have added some greens but not sure if that was coriander mint. Would be helpful if you can clarify. I see this to be a non spicy version coz you have added whole green chilli and cooked that releases flavor and cuts down the spice. I will definitely try it for my little one. Thanks for sharing.

    I tried the first method and loved the Biryani, one of the best I have made. I did have lots of water in the chicken which I had to dry up on a stove and had to keep it on Warm function for longer. But it turned out like restaurant style Biryani. Thank you ❤️

    Maybe use a glass or steel pot lid instead and leave it a bit off the instant pot to leave a gap while cooking the chicken in saute mode after the pressure cooking. Just fyi the ink from newspaper and flyers can be toxic as they come into contact with cooking steam

    Last method seems really interesting. Mujhe yahan Kamloops(British Columbia, Canada) mein kisi restaurant mein(neither Indian nor Pakistani) acchi Biryani mili hi nahi. I've recently come here from Mumbai for my MBA and bought Instant Pot.
    Will use Shan Masala and your method to cook Biryani and have a daawat with my friends when we plan for Pot Luck.

      You can use the same recipe just adjust the cooking time accordingly ( check my beef/mutton IP video) and use double the amount of ginger garlic

    In layered biryani can we reduce the time of pressure cook ? Bcoz rice is already half cooked

      Layered biryani isnt given any pressure after the assembly. Its just put on dum or keep warm mode so the rice can cook completely and all the flavours can merge. Hope this helps :)

      Yes you can. The cooking time for mutton might be different but it should work well :)

    When chicken is pressurized (high pressure) in both methods, do I need to add water before pressurizing?
    My food gets burnt in instant pot if not enough water when pressurizing.
    Will definitely try this soon!! 😀😀

      My chicken already had some water and the yogurt also release it while on pressure so i dont have to put it usually. But if you chicken is still getting burnt, add 1/4 cup of water :)

    Thank you for you receipe, I have the same IP as you, but 8 duo size. I will be making it first time on Friday. I will be using 2nd method but I will change the beginning because I want potato so will suate with jeera then will add the chicken. Last step so around 12.30, you press "KEEP WARM" so the DUM part. Seal the lid and do you wait for 10 minutes for the last 20% rice to cook or like 6 minutes. What does "KEEP WARM" Do? Keep the food warm or cook it??? Thank you. ❤️

      The keep warm keeps the instant pot optimally warm for those 10mins instead of just cooling down every minute so you have more even gentle steam building up among the rice layer infusing flavours and aroma while perfectly cooking the rice. Hope this helps :)

    Assaĺaam alikum wrwb, Jazak Allah khair for helping us through amazing recipes in instant pot. I have used 6cuos rice n 5 cups of water...its a 8l instant pot. So it should be cooked on low pressure level right? Coz when I select rice it was on high pressure...pls assist. Jazak Allah khair sis❤🌹

    What was the last SETTING you have used to dum the briyani for last step (at 7:55) ?
    Also the meal prep idea you have shown (of marinated briyani masala chicken) upto how long can you keep it in the freezer for?

      For dum its “keep warm” mode. And you can easily freeze it for upto a month or month n a half :)

    I like the second method but I don't have rice mode because I have the ninja foodi - can I use pressure mode? When the rice is in the pot with the chicken? Thanks

      Yes you can use it pressure mode. But im not familiar with ninja foodie so im not sure how much time it would take. Maybe try 8 mins on low pressure if using the exact same measurements

    Hi recently got a gift of instant pot duo crisp and air fryer and tried your matar palao recipe and it turned out perfect.     Sorry I don’t quite understand. In the end for the ‘dum’ part (after assembling the biryani in layers) did you put it in low pressure cooker pressure for the ‘dum’ or was it sauté mode.

    I'm sooo gonna try this tomorrow, in sha Allah. One question, i always have problem with rice. They either break or remain hard. I can only wish that one day my biryani will look like yours 💕 so any tips?

      Try to buy quality rice. It depends so much on that. Get fine long grain basmati. Also one tip is to not over mix your rice after esp before dum. Just a couple tosses n thats all. I have made that mistake many times in the past esp beginning years when i didnt know much about desi cooking. And the tip for straining after soaking helps alot. Basically what i do is i wash them n soak them for 45min n then put in a sieve for 15-20mins. Then 4 or max 5 mins in water at HIGH. Oh and dont overfill your pot when boiling water. 2.5-3 cups of water for 1 cup of rice. Hope these help n your biryani turns out even better then mine.       Yes in both methods actually :) in the second method you can skip that esp if you know your rice, just let the pressure release naturally but just to make sure that my rice dont get over cooked i like to release the pressure, give my rice a very gentle mix (a couple tosses only) and then give it dum on keep warm mode

    Whenever i boil my rice in instantpot ( only rinse, no soaking, 1:1 ratio, with butter, rice mode and NPR for 5 min , its either soggy or hard. What am i doing wrong?

      Always soak your rice for atleast 20-30mins. Use 1:1 ratio of “just dipped” ( i have shown that level in my matar pulao video) Also i never do NPR for rice thats the reason i do a QPR and then put it on slow cook for 10-15 mins, as then i can control how much the rice cooks

    Hi, I tried ur recepie. It was really easy. But I don't get the actual amount of water. Is it 1.7 ml for 2 cup of rice? And I have one more query. Every time I try to cook it gets burnt in the bottom. Doesn't even give any signal that it's getting burnt. I even tried brushing some oil at the bottom but it didn't help. Can you give any suggestions?

    At 9:35, I noticed you pressure cooked the chicken for 6 minutes. Does it come to pressure without needing to add at least a cup of water? I've always heard and seen that you must add at least a cup of water for the IP to come to pressure. Please advice!

      For beef the time u pressure cook will be more around 25-35 mins and u might need more ginger.

      I have never had any issues with using 1/4 to 1/2 cup water. The chicken releases enough stock so it doesnt burn

    Great recipes! Can you please tell me when to use the biryani and the chicken mode of the instant pot? Mine comes with these, so how do i use these built in modes?? I bought the cooker for built in modes to make life eadier, but i cant find any recipe explaining the difference in all these modes, ppl only use the pressure cook if they have to cook chicken, then why there is option of chicken mode??

      Thank you so much. I have never seen an IP with a specific “Biryani” mode. The reason most people including me use the pressure cook mode for chicken is cz you can control how tender your chicken gets. Its all preferential :) but i do use other modes too eg the 2nd method in this video using rice mode which is what i have been lately using for cooking my rice

    In the first method , when you set the IP to Keep warm for 10 minutes. The timer which you set is for 10 hours or minutes ? Because 00:10 is 10 minutes in keep warm , isn’t it ?

      I have never tried it with brown rice so i am not sure. Perhaps check the packaging instructions

      Hi, let me explain it here. So all you do is pressure cook the marinated chicken and then add the rice followed by the toppings. Make sure not to mix anything at this point. And then cook it on rice mode. Hope this helps :)

    Hi I just bought an instant pot and finally at sum. The jeep warm option you went for 10 hours and 30 minutes. I am stuck at this final step. My rice are still not cook

      Just close and seal the lid and let your rice sit for 20min so it can absorb all the steam and cook through. Skip keep warm

      Also if the rice is more less cooked then 80-90% add a couple tbsp more hot water before sealing the lid

    Hi, just loved your second method! I always watch your video while making biryani. But most of the time the water measurement gets messed up. Can you please help me with what’s the water measurement for Basmati rice and normal sona Mansoori rice separately ?

      For every kind of rice..basmati, sella, long grain. Just make sure you pre soak them
