    This made me missed my Indian Friends. I am a Filipino. And it is not only the Biryani that I love, also Indian People. I just had Mutton Biryani 2 days ago from Southern Spice. So delicious!

    I didn't try your recipe but the way you used the instant pot to make the biryani, Also I added a browned potato and I sauted the rice in a few spoons of oil before half cooking it. I love the instructions you've given on the instant pot food was moist and nicely done. Thanks!

    How long to cook rice 50% pls ? I always overcook mine. Also for 2 cups or rice how many cups of water pls ?

      When you do it on the stove…timings change from stove to stove….you have to see if the rice comes to the surface. Sample a few grains and see if its cooked. Thats the most accurate way.

    How would you make this with a 3qt instant pot? Would you use 1lb of meat instead of 2lbs and also 2lbs of rice instead of 4lbs?

      Approximately 10 mins. You will see a few grains of rice come to the surface.Adjust as per quantity of the rice and the desired softness of rice.

    Hi Sandhya,
    Thank u so much for the recipe. I tried it and the result is awesome. I have tried your recipe for chicken biriyani too and that is also great. I have only question that in this goat/lamb biriyani recipe can I follow rice cooking part as it is in your chicken biriyani recipe where we are using uncooked rice and pressure cook for 6 mins?

      Thanks for the kind words! Yes its possible.However just make sure mutton is cooked well before layering it with rice! The timings with goat meat can be tricky, so its better to do them separately when you are learning how to make it, but once you get the hang of it, they can be cooked together!

    I halved the recipe because I wasn't sure if my Instant Pot could fit 2 lb of meat and 4 cups of rice and it turned out so delicious! Thank you so much for posting. I was wondering what size IP you are using in this video?

    I had a couple of questions on ingredients. We have a large Indian market nearby and the spice aisle is huge. I did not find Nawabi Meat Masala, though. I used a beef masala blend from another company. I'm wondering how different my flavors in the end will be from yours? Also, you referred to biryani leaves. I did not find those, so I ended up putting in a few fresh curry leaves and a couple of bay leaves. Are biryani leaves known by another name? The vein structure looks different from the bay leaves I have, so I think it is a different plant. It is currently simmering away and smells amazing! Thanks!

      Yes, bay leaves are biryani leaves! Happy cooking!

      Bay leaf is the biryani leaf, so you should good with that. For the meat masala you can use Shan meat masala or Shan biryani masala whichever is available in the store next to you.

      Yes, you can get it from any indian grocerie store. Can get different variety chicken mutton or beef.

    I tried your recipe, but in IP version 2 there is no manual option, so I tried pressure cook option but burnt the meat. I’m not sure where it went wrong?

      Poornima Gaddam pressure cook button is the same as manual button. They pressure cook. If you got the burn display most likely reasons were 1. There was burnt food stuck to the bottom 2 there wasnt enough water in the pot to come to pressure 3 the sealing ring wasnt in place. Next time try scraping the food before pressure cooking. 👍🏻

      I had the same problem....in this video there was no additional water added along with the meat .....I did the same thing and when I got burnt message and added another 2 cups of water to the meat but still the gravy was thick and kept on saying burn message again and again ( I also tried to scrap of light burn with wooden spoon ) but nothing helped .....also I couldn't watch the time being counted down on my IP

    I have made your biriani in my instant pot but would not like to disturb the layers. it is cold now as I cooked it yesterday. Can I reheat in the instant pot or will is get over cooked or burnt?

      You can press "Keep Warm" but keep in mind if its in that mode for a long time the bottom of the food will be burnt a bit.

    When I pressure cook mutton in instant pot with same ingredients it does not finish the 15 min cycle...it kept on displaying burn message even after adding water ?? Very disappointed....

      ‘Burn’ sign usually happens when something is stuck to your liner bottom. Adding a little water and scraping helps. Another reason for burn is insufficient water so it cant build pressure. Add water. Another reason is the sealing ring isnt sitting right. Hope these tips help.

    The lid used at the end was different from the one in the beginning. Why not use the lid it came with?

      If I use the instant pot lid, I would have to remember to ensure the whistle isnt in sealing mode. It less hassle and more convinient to use a glass lid sometimes.

    Dhum is when the meat and rice are cooked together. You cooked meat before adding rice. How would you do it uncooked

      Dum isnt about cooking together. Dum means to 'slow cook' on a small flame.In traditional dum biryani, coal is used to slow cook and is placed over and under the copper pot. In fact, in hyderabadi biryani, meat and rice are both half cooked separately and then layered over each other and then cooked again to completion. I am doing this in an Instant Pot, so the utensils are completely different,yet the end result is the same.
      I wouldnt recommend using uncooked rice, as its hard to control the results.It might overcook the rice and under cook the mutton or vice versa. The results are more consistent when rice and mutton are partially cooked and then brought together for finishing the dish.

      We usually dont do more than two layers for biryani. The idea is the masala and meat sit at the bottom and the rice sits on top.While serving you scoop out the amount of masala to rice ratio as per the wish of the person eating. Ofcourse this is all very old school. You can do as many layers as you please. Cheers!
