I’ve been gardening and canning food for years. I highly recommend buying the Ball Blue Book. It will give accurate information for the elevation you live at for pressure canning. It’s a valuable reference tool. Water bath canning is your friend for high acid foods like tomatoes. It’s important to be exact when canning for food safety, no daring salmonella on this one 😂 You are doing great!
All the recipes in the Ball book are heavily researched with science behind them and can be trusted. Canning is an art that does involve some science. Too much or too little of certain ingredients can throw off the whole recipe. I have never had any issues with any recipe from that book.

All the trees you have gather up your leaves and use that as the ground cover, its great for the soil and so is chicken poop so you will get great soil out of it and the leaves bring bugs which brings the chickens lots of food.
The chickens are beautiful! They love to eat grubs and other insects. I would plant all kinds of gardens plants for them. If you put a small pile of sticksand leaves, it will attracts other bugs and they will be happier. You could start an open compost pile in there too. I put a few ice cubes in between the parchment paper and the Dutch oven, I also put a cookie sheet on the rack under the Dutch oven and it makes the bottom on the bread softer. Thank you for sharing.

Kim, you have 2 new large storage closets in your addition, that will be a lot of space to store anything you wanna can, so go for it! And something you can give your chickens is a bale of straw, just plop it in their enclosure, cut the ties off it and let them do the digging and scratching to spread it around all by themselves, it's what they love. And you can get bales of different stuff. like alfalfa, lusern, barley wheat etc, even heaps of garden leaves and grass cuttings, they love anything to scratch through. Thanks for showing us your feathery girls, they're so cute!
The acid from the buttermilk reacts with the baking powder to make it fluffy. ☺️. Pumpkin is a good deworming item for chickens too. Your homestead is coming along nicely. Great job!!

My granny always left her butter out. We use one of those butter troughs too, love it. We need to start making our butter as well along with lots of other things. Just paying a lot more attention to the food packaging, it’s scary what they’re putting in our food.
I found my grater and slicer attachments for my kitchen aid at an estate sale for $5. I was so excited😂. Its 4 yrs later and im still excited 😂 The residual cheese left behind is the chef snack!

I love making my own chicken stock! I bring out my 2 crock pots and make 6 batches and freeze it. Homemade is the best and a lot less chemicals! Another great video!!
You can wash your butter in your mixer !!!! Lift it up with all the butter stuck to the whisk save your butter milk, then add some ice water to the bowl and whisk again and again till your water isn't milky ! Then drain with cheesecloth! Also you can save egg shells, dry them, grind them and feed them back to the ladies! It helps with their calcium and egg production ! Loved todays vodeo and how realistic you are !

I chuck a single carrot, few sticks of celery and an onion in with my chicken stock. So just bits of what I’m already using in meals. Reduces the cost. I also grow the herbs I use in it. A herb garden saves me loads.
Look at you go with Homesteading. My sister has chickens and when they first started laying eggs she got a lot of double yolks and the colors she gets are like the rainbow. She brought me 12 dozen eggs over the weekend. They last forever. Thanks for sharing.

When making butter I start with the whisk until the stiff peaks then add the paddle attachment. It's easier to get the butter off the paddle. And yes less heavy whipping cream..... 1 quart at a time. When it starts becoming solid butter i pour some of the liquid ( buttermilk) out.

Even the fact that you don't throw away the chicken bones is great! As you do cook alot and with alot of veggies I think it may be worth it to save the scraps for also. But of course also the chickens will be happy about it. I just love it. You rock, Kim!

Okay, for the butter, not sobmuch heavy whipping cream up front. Start low and increase speed as it thickens. Watch as it starts to separate and turn the speed down so it doesn’t splash everywhere. Also, you can add salt while it is being whipped.

I love those containers to freeze the broth. I like to freeze sautéed onions and garlic and sometimes veggies or home made tomatoes sauces too to make life easy. These containers are great for that purpose too.
Kim, you are so funny. Next time you make butter start it on a lower speed then increase till you start seeing the liquid. Turn it off and drain off the butter milk into a container, jar or whatever. Do that as many times as you have too. After that put the butter in a cheese cloth and squeeze out any remaining liquid. Took me a few times to get it right. Think my dog just stood under me and licked up anything that came her way, lol. Stupid chihuahua lol😁🧈
My grandpa back in the 70"s made the best sour dough pancakes he made his starter with potato water and flour. These remind me of his. They look fantastic. YES I am making them..Thanks homesteading Kim...please try potato water sour dough you will never go back to any other. It holds better in the fridge, less maintenance. Boil potatoes like for mashed potatoes, drain water, save it and cool, use the cooled potato water instead of filtered water add flour stir ferment on counter overnight, then proceed like a normal starter. I starter a one to one ratio potato water to flour
So much love from PA! Sourdough is so addicting! Brownies are amazing! Chocolate chip cookies are prepped in my fridge and freezer (raw in balls) both. Note-take the bowl off the scale when you mix you might break your scale.
Those chickens will turn a compost for you if you chose to start one in their area then you take the compost after it broke down & feed it to any plants you try to grow or fruit trees. They also love to dust bath to help keep mites of their skin during Spring/Summer when ever there is dry dirt.

Put down wood chips in the coop! Looks neater, and while they scratch to get bugs under it, they did the poop into the ground and it reduces the stank. Also make them a nice dust bath space if you haven’t already :)

Those chickens will turn a compost for you if you chose to start one in their area then you take the compost after it broke down & feed it to any plants you try to grow or fruit trees.
They also love to dust bath to help keep mites of their skin during Spring/Summer when ever there is dry dirt.

My daughter got me a sourdough cookbook and starter set for Christmas! Love your gigantic whisk! Those brownies looked delicious and so did your chicken stock and butter! Great tip for shredding cheese! I too want to get away from packaged cheeses! Look at you girl, doing all the things!
Make sure the chickens have plenty of shade throughout the day. And especially shade covering their coup. 😊

Put down wood chips in the coop! Looks neater, and while they scratch to get bugs under it, they did the poop into the ground and it reduces the stank.
Also make them a nice dust bath space if you haven’t already :)
