    I use a small pair of needle nose pliers and reach in the stem end of the peach, half a twist and pit pulls right off. Then I drop into boiling water for a minute or two. Then from into cold water. Super fast!!! Try it!

    Miss Vickie - you can put this in a slow cooker and walk away. I have made it on low and let it cook overnight. Our prayers for you and that smoke. A few years ago our East Tennessee mountains were on fire after a very unusual drought. We smelled it for many weeks.

    I didn’t get Azure peaches last month, but instead got plums. My daughter and I made 6 pints of plum nectar concentrate❤️. Now I’m going to my order and adding peaches🙏🏼❤️🇺🇸

      I keep trying to get one of these channels to make tshirts with that on them and a pic of jam in a mason jar. Lol “Sunshine in a jar.” I may have to break out my cricut. Lol

    I made these after I watched your video. I since made 3 more batches. I love peaches and ginger so this is going to be an awesome treat this winter . I’m in upstate SC we are peach country. We had a great harvest this year. I always get the seconds because they are closer to being ready than the perfect ones which are expensive and usually get shipped out to other places .

    When I take the skin off the peaches I used them in my freeze dryer to make a powder. Could dehydrated them too makes a very tasty powder.

      Can also boil them, even with the pits, and make jelly from the juice.

    OMGooooosh.....PEACH....OMGooooosh......GINGER......OMGoooooosh BUTTER....OMGoooosh....PEACH GINGER BUTTER!!!! I will have to try this. I've only ever tried Apple Butter and Pumpkin Butter. Love both flavors, but Peach Ginger Butter.....Sounds like a game changer. I love Ginger and Peach. Oh man, I bet you can make peach jelly with your peals.....mmmmmmm mmmmmm mmmmm. Never had peach jelly, but wow, I bet it's good. This sounds heavenly! I bet your kitchen smells yummylicious!

    That looks so good Vickie. I just got 40 lbs. of peaches so I think I will make this as well as just canning some. I’m wondering if you could cook this in a crockpot then you wouldn’t have to stand and stir it. I know that isn’t a good option for you because you are off grid but thinking I might try it. I am pretty impatient. LOL. Yes, I can imagine the smoke as we are having it here in Yakima from the Schneider Fire here in the area. I am so tired of it. Blessings!

      You could but remember shr cooked off some liquid to get thr butter thick
      Crock pot wont do thst part. Sorry!!

      Yes you can. You just have to leave the kids of our at least partially open so that the excess liquid can escape instead of falling or running back into the pot. And, in my experience it may come out darker. I cooked some regular peach butter this year in my show cooker. My peaches were pretty ripe and I probably used a little too much cinnamon and definitely cooked it longer than was necessary (due to other things going on at the time) and it came out dark like apple butter. But the taste was great. With fresher peaches and no cinnamon it should work out well. At the worse it may be dark or darker but the taste will still be fantastic! You never know until you try. I did, and I'll do it again! A great time and labor saver! JS IMHO

    I had the same amount you did but I had extra fruit as well and I really like the tang with sugar , you can really taste the peach .

    Yes, I just made some yesterday! I live in SC and we are in major peach harvest right now . Peach everything . I’ve done peach pie filling also . Yum .

    Maybe add a slice of poundcake and have a peach shortcake? I wonder if you might use this in a peach upside-down cake?

    This looks so yummy!! Question, if you wanted to keep this more like a peach sauce or a little less firm, can you just cook less then can? Or is that not safe?

      Cook less is ok after the initial 25-30 min. boil time. The added lemon juice and zest increases the acidity so there shouldn't be any problem. The added time after the 25-30 min. boil is for reduction for thicker sauce only.
