    What a beautiful kitchen you have! I was just gifted 50+ small pumpkins yesterday. You've inspired me to can a few. Thank you for posting this.

    Beautiful jars of pumpkin! I am definitely going to be canning my jack-o-lantern pumpkins, we don't carve them we paint them. So we can use the pumpkin for cooking. Thanks for sharing.

      I am going to open the partial jar to see how it came out, and probably add to my doggies food. They love it!

    I love your kitchen. It was the first kitchen in an off grid home that made me think having a modern kitchen in an off grid home was possible.

      Thank you. Off gird can be very different, depending on circumstances and budget. Technology allows us to live very well, but we do have to make choices. Mostly it involves timing of doing things that use power to take advantage of sunshine.

      I will probably can butternut squash if I get hold of some at a good price, but when these were offered, I gladly took them!

    Roasted pumpkin seeds...mmmmmm! And we all need a little pumpkin all over our floor sometimes! 😁😁😁
    When I was very young I decided I was going to cook a pumpkin and make pumpkin pie from scratch. What a disaster. The pie was good...but not worth the effort. It was very stringy. I think I might have had too big of a pumpkin. Home canned pumpkin would have made it so easy!

      LOL! Keeping it real! I did that too years ago, and it was a large pumpkin. I did try it with a smaller one, and it was better. I think I am going to do a video and open one of the jars to show how it came out.

    Looks great! I didn't care for my canned pumpkin, it was so watery when I mashed it, I felt like I lost half of it squeezing out water!

      Thank you! I know it will be watery, but I plan on draining it in cheesecloth before cooking with it, and you can’t beat the price!

    I just picked up 3 pumpkins from the store the other day so I can jar them up. Never canned pumpkins before. Your video couldn't have been timed better! 😊

      It’s not difficult at all, but it is a little time consuming. Just remember - sharp knives!

    Could you use the blanching water to fill jars? Is there a reason why we should not use the blanching water? I've never canned pumpkin either. Are these pie pumpkins that you had? Regular pumpkin is so mild in flavor. Is pie pumpkin a new hybrid? There is a lot I do not know about these.

      Hello Patricia, I don’t see why not. As long as you rinse your pumpkin chunks before blanching to remove any loose debris it should be fine. I’m not sure what type of pumpkins these are, but I am guessing that they are some type of pie pumpkin, as these neighbors would not need or want decorative pumpkins. I have read that pie pumpkins are a little sweeter, and better for cooking with, but I am certainly not an expert. I think they are probably less stringy than large pumpkins too. That being said, I have made pies from regular grocery store pumpkins.

    Hi lovely, can you please tell me what type of pumpkin that is as we had ones much like it here in our supermarkets and they were labeled Jackolantern pumpkins and not for consumption?? because of it being soo fibrous etc inside? Do they have a nice flavour?

      I will try to find out for you. These were grown by a neighbor, and my guess is they are possibly the sugar pie variety, but I will ask for you.

      Ps. I forgot to ask you about giving pumpkin to doggy’s if they have yummy troubles? Is it for when they get the scours?

      Hope Love Faith I have read that giving pumpkin to dogs can be helpful whether they have loose or firm stools, or if it is just upset tummy. I do know it has always worked when we have given it to our dogs, and all 3 dogs love it. I would only add about 1/2 to 1 Tbsp of smashed pumpkin (for our medium to large dogs) to their food . Any change in diet can cause more problems.

      Store bought Pumpkin is a variety of pumpkin and squash.

    Vickie, I've always heard that some types of pumpkins are "good for eating" and some aren't. This has paralyzed me when it comes to canning pumpkins because I don't know which kind of pumpkin I should buy. Is this a real concern or can we eat any kind of pumpkin and expect a good result? If it's "real", how does one know the difference?

      Hello Marcia, I have used the big ones before for pies, but I will say they are hard to work with, and are very stringy. The small pie pumpkins work best, but with pressure canning they should be easy to purée with a food processor, or maybe an immersion blender. I do know that the stores sell “pie” pumpkins, and I believe they are a special variety, however I don’t know what kind these are. I might do a quick video review to show how they came out, how well they purée, and also how much moisture is left behind after draining. I do know that they will be more watery than the canned purée that you buy.

      There are specific pumpkins or squash best for pies "sugar pie pumpkin" "Dickinson pumpkin" and "cheese pumpkins" less stringey and seeds more meat. About to can some hounds tooth cheese pumpkins which is why I am here.
