    I could hear the angels sing when you took the lid off those peaches. What a delicious looking recipe, and free peaches to boot!! Big hugs from beautiful British Columbia.

    Salsa verde is a staple in our home, this last year I wasn't able to find any tomatillos which im still so sad about and these drunken peaches are a must for me next summer, we live just down the way from an organic orchard that has the BEST peaches. Thank you for the video!

    Vickie, those are the prettiest peaches I've ever seen. And your recipe sounds so amazing. I know you worked really hard canning these and I sure your family is so thankful for you. I heard you say you have iphone 7 and so do I. I was wondering what kind of tripod you use to video with. I was thinking about making some videos when I feel a little more confident that is. I can hear you just fine too. I love vanilla beans so much the last batch I had dried out because I did not use them quick enough. I guess I just hang on to them for special recipes and do not want to run out. I hope you are doing well this week. Thank you for sharing this great recipe.--------Tressa Daigle

      Tressa's Stay at Home Life yes they were beautiful, and I was so thankful to receive them! I found a tripod on Amazon that clamps onto your phone. I do have to take my phone case off to use it, but it seems to work very well. I will get you a link if you would like. I just made my Chile Verde recipe using the microphone, so hopefully the ones having trouble with the sound can hear well now. Please do make some videos! I really was uncomfortable at first, but it wasn't as hard as I thought it would be, and you will grow more confident! And for the vanilla beans, if they are dried you can always try making homemade vanilla!

      Thank you for the information. I will look on Amazon and find it. That is what I did with those vanilla beans. I can't wait to see your Chile Verde recipe. You sure are a good cook!! Have a wonderful day!!-----Tressa Daigle

    My grandma says if you have alcohol in your caning glasses that you can't pressure can in them because they will break. Her mom lost a lot of canned items because of that. So I don't know about water bath.

      I found this recipe in The All New Ball Book Of Canning & Preserving on page 118, so there should be no problem with it. I would make sure to use actual canning jars, and use the correct headspace.

    do you just can your thighs raw or par cooked? do you do anything special? I can mine as well just curious if you can them just as is, or something fancy?? =)

    • @VickiesCountryHome
      @VickiesCountryHome  7 років тому +1

      Swayy Watkins I par cooked them this time. Normally I have canned them raw. I actually put them in boiling water until they were no longer raw looking on the outside, then put them in the jars with broth made from Better Than Bouillon Chicken Base. We tried it last night, and they came out wonderful! I do think that it improved the texture over raw pack, and had the added flavor from the broth, although you could use water (or even the cooking broth, but I canned that up to put on my dogs food 🙂).

      thank you! my zaycon comes next week, 80 lbs total of chicken... i typically par cook, so i was curious of how others do theirs, and i do use some broth in mine to enhance the flavor when i open it.. thanks for sharing your way!
