    Watching from New Zealand, hoping to do some flounder fishing here soon.3 fishing techniques i will have to try out and 2 new ways to fillet a flounder. I do however feel the fillets would taste better with the fish killed earlier and put in iced water asap,less build of of lactic acid in the flesh.

      I bleed and gut my fish, have been doing that for decades. And I also am very careful not to contaminate the fresh fillets with the fish slime, no need to wash it with chlorinated water eather, it makes a world of difference. Here is a link to my video.

    To start off, use a table spoon to scale the fish. Cut the head & tail off. Go in w/ a long filet knife, filet the top off the bone in one piece. Same on the bottom. You have 2 slabs of flounder. Stuff w/ chopped onions,,peppers, ground up shrimp & crab meat. Season all the stuffing. put on top of bottom slab, Put top of flounder over stuffing. Take a large needle w/ # 9 trolling twine. Sew both slabs together, make a knot & do this every 1" apart. You will have a boneless flounder glove. Season out side, pass in batter, & fish fry. Then you fry the stuffed flounder. It is awesome. Better than baked! And I can fillet a flounder way better & faster than you. Take it from a true CAJUN, from Bayou Lafourche.

    If you like flounder try gigging. The tide has to be low and no wind blowing. Flounder come in and feed. They burrow down in the sand. You get a colmeman lantern and walk the flats until you see one of these guys. they have a distinct indintation so you know they are in waiting to feed. You have a gig and you gig em in the head preferably and bring em out. You get alot of exercise walking the flats and some nights they are in and some the water is too murky. I have gigged as many as 46. You have to work fast with the tide. when the tide comes in they go back out in the deep so you cant see them

    Man this awesome! I tried to catch some flounder this past weekend! South LA had a big one and it got off soon as it got to surface! Everyone was killing them near the gates but was too crowded so couldn’t get near so didn’t get any flounder
