- Manila could be the next big food destination! Chef Alvin Cailan is undoubtedly one of the most prominent figures of the Filipino American food movement in the United States. He is back in the Philippines to pay homage to his roots and to learn more about contemporary Pinoy dining.
From opening the popular Eggslut in LA, to writing his new cookbook, “Amboy”, Chef Alvin is on a mission to spread the good vibes and flavors of his kitchen to the world.
The challenge: to try the newest fine dining Filipino restaurants in the country. Chef Alvin is meeting the modern tastemakers of the local culinary scene like Chef Chele Gonzalez of Asador Alfonso, Don Baldosano of Linamnam MNL, Chef Stephan Duhesme of Metiz, and Chef JP Cruz of Inatô.

As a balikbayan, i never actively search for these restaurants when i go home, it's always the street foods and cheap eats that I crave. I don't go out of my way to look for a fine dining experience just because i never thought about these types of food. But with so many channels featuring fine dining, I gotta say, I have to go back and have a look.

Solid yung "Asiongs Restaurant" nasa cavite city pa yan dati at paborito namin bumili ng ulam jan noon. Mga lolo at lola din namin mahilig kumain jan sa restaurant na yan. Lahat ng pagkain sa kanila ay masasarap 👌🏻 isa sa mga OG's ng cavite pag dating sa pagkain.

Inato in bisaya means simple, nothing fancy, as according only to the host style and not with so much extravagant prep. It is said to a visitor/s so that they will feel welcome and not underwhelmed as to what many visitor would thought that every household must prep fancy ones so it will be pleasing.

Then goes to fine dining places? Lol. That's an approximation of Filipino food. From a certain pov, charitably some might even say an "elevation" of Filipino food. But that's reconnecting to one's roots. That's reconnecting to other people's bougiefied interpretation of one's roots.
