I made your sourdough blueberry muffins today, so yummy. The muffins were the first thing that I made with the discard.I made the sourdough starter following your recipe and it was so easy. For a couple of days I thought that the starter was a dud, but I kept feeding it and then it started growing again. For years I was so intimidated to make sourdough bread. My husband encouraged me to just try. Thanks so much for everything you do. God bless you and your family.😊😊
I come from a fam of 12 kids and my dad is amazing at making eggs benedict! He actually puts the eggs in a muffin tin and baked them. He also brushes melted butter and chives on top with salt and pepper. It is not the same as poached, but super yummy and makes a lot for a large crowd!
I learned a great trick for cooking lots of poached eggs at once! I love making eggs Benedict for my family but never liked how long it took to poach each egg. I fill a large skillet with water a little over half full (about 2 inches) and then bring to boil. Then when gently boiling I crack in a bunch of eggs along the outside, leaving a little room in between each one. After gently boiling for about 2 minutes, I turn off the heat and let them sit in the water for 10 minutes. Then I scoop them out and they are perfect and I can make about 6 at a time! Just search "poached eggs in a skillet" to find a more detailed method. Enjoy!
Try poaching eggs in a wide frying pan. Poaching works just fine in shallow water, especially if you're not worried about them being perfectly round. My mom always did 8-10 at a time in shallow water and it goes much quicker. We LOVED eggs benedict as kids.

Love these ideas! I make my hollandaise the same way and it's so delicious! I use my cast iron dutch oven to boil water for the eggs and I can fit four eggs in there at a time. It makes the process go a little faster for a bigger family. 🙂 Thanks for another great video!

I've recently learned you can premake the poached eggs, just cook as usual but lay gently on a plate or baking sheet with paper towels. Right when everything else is ready drop them into boiling water for JUST a minute to reheat and put onto a plate to serve

That is the multi purpose Danish Dough Whisk! I got mine from Zatoba(a company that makes sourdough supplies) It’s a time and mess saver when mixing up sourdough and so versatile!!
I just made English muffins for the first time with my newly started sourdough. So unbelievably good!!!!! Have you had any problems with using einkorn for the entire recipe? (My starter is einkorn.) Also, I would love to hear clean up tricks like for those bowls with batter sticking on the edges!

There are several egg recipes that make no sense for a group, crowd and Eggs Benedict is one of those because it takes forever for the cook to be able to eat and few are really eating at the same time. It all looked delicious. Do you use other types of breads ever: bought or made?
Poached eggs can be made ahead of time. Place them in iced water and reheat in simmering water, just before serving. Go to Martha Stewart or Julia Child, also America's Test Kitchen did a really job on a recent episode. You should be eating with your family.

Real fritata woud be if you just mix those eggs with vegetable, on the stove. Dont put them in oven...and stop cooking it when the eggs are still creamy...and when its over, on the plate...put some parmegiano chees👌👌

“Hot pan, cold oil, foods don’t stick.” Heat your pan up, then add the fat or oil, then the food. Try that and see if it helps.

same here! I actually had to throw mine away :/ and that's because I added SO much olive oil. Not sure why lol, I ended up getting the silicone one!

Are you worried about the raw egg in the sauce? Hollandaise typically requires cooking it over the stove while adding the butter.
This is how they made it in a restaurant that I worked in. The hot hot butter cooks the egg as it blends! 😀
