And in the anime adaptation of each said game, the plyer who picks 3rd option all the time would be the canon one according to anime. So what if 0 sanity Dokutah becomes the canon at the end? 🤔

The problem with those options I've noticed is that you don't get any extra dialogue. Usually, from what I've gathered, when you make a choice the characters will react to that via a single line, before moving on with the dialogue that would have come no matter what you picked. If you go with "..." they usually just move straight on with what they were gonna say anyway.
I wish my Gudako had more options for the dialogues too, two is too little, though at least the second option usually ends up being a fourth wall joke or hilarious shit, but on serious scenes both options usually go with serious stuff :'v

3 is the only right answer XD, I also picked it immediately. 0 sanity doctor is always the best doctor, I also kind of just also like the kind of fearless knowledge it implies too. Your enemy can't read you if you immediately put them off their guard.
We don’t wear the mask all the time, only the hood and i have read somewhere that the mouth part of the mask is transparent and only us as players can’t see it

Gacha games tend to do that a lot where the main character is mostly a blank slate used as a vessel to interact with the game. That's why Paimon exists, since the main character isn't supposed to be... Well, a character, we need something else to interact. Problem is, we aren't a faceless goon in Genshin, we are Lumine/Aether, who very much are their own characters, with actual motivations. Genshin is trying to have it both ways which is why it feels... bad, yeah it's just bad.
