Red lentil curry

- Very easy to make, tasted great, but took a lot longer than it said in the recipe for the lentils to soften.
Recipe:
200g red lentils, soaked
2 red onions
1 aubergine
Half a punnet of mushrooms
Jar of plum tomatoes
Ginger, curry powder, garlic, cumin, coriander, pepper, chilli. saffron and tumeric to your taste
Water
Spoonful of low fat yogurt
edit: forgot the calories - this will make 3 or 4 portions and calculated at 3 portions it was 190 kcals per portion, 6.6g total fat (2.4g sat fat) and 7.8g protein; cholesterol n/a.

@@Baku_Bulgaria_Bucharest it's a new thing for me as well. Like brand new. Still adjusting to my diet. But if find something Worth sharing I definitely will dear. I'm hoping to find some healthy burger ideas because I love my cheeseburgers🥲
@Joseph-pd6eg for a burger, if you can get 5% fat or 3% fat mince you can squish the mince with an egg, salt, pepper, any seasoning you enjoy and a small handful of oats. Shape into patties and put in the fridge for an hour or two to firm up. Fry in a dry non stick pan. Wholemeal bun, salad, and light mozzarella. For big mac style dressing, mustard and ketchup in yogurt or low fat mayo, with chopped gherkin :)
