Umami or however its spelled is not a english word! Only reason i know of it is because i heard it in food wars, a japanese anime about food when describing the umami of tomatoes or of some seaweed soup. Based on this, the closest english word to umami is simply "flavour" or it could be "tangy" altho "tangy" is more of a slang then a word as it is not used eveywhere. The 5 main flavousr are Salty, Sweet, Bitter, Spicy and Sour. But Umami is not like any of those 5. Tangy is often applied to describe spicy foods but also goes with tomatoe based foods which are not spicy. Like Umami, tangy is not really a specific flavor and is too broad a term. Therefore, it will forever stay as a slang and never officially be a word.

Chinese food didn't have dessert other than orange wedges. unless it is a special occasion when they will serve sho bao (birthday bun), hung dao salle (red bean soup), or po dean (tapioca pudding with lotus paste). a popular slang in the old day was- you have a soup lady? This implies you have a mistress. la tong is usually free which most restaurant don't make money on it (this is western hemisphere custom).
Nah Edward is right about the chicken corn soup. I made it for a white friend of mine in college who later went on to become a chef, dude was blown away by how good it was. After his first bowl he asked for a recipe and then went on to eat another 2-3 bowls in the same sitting S+ ranking for sure

If some non-Chinese ppl think eating Hainanese Chicken is “weird” because it’s cold, then why do they think it’s not weird to have cold chicken in salads and sandwiches? That confuses me… I could understand the gelatinous texture of the skin being ‘foreign’ to them though (which you can be removed easily & not eaten).
Don't forget that the chicken would be bone in, which of course wouldn't be present in salads and sandwiches. Overall I think it's just a mindset caused by seeing a chicken presented in a different way.
Probably because taste is a very subjective thing… I love the taste of chicken regardless of it being cold or not. Also have friends/acquaintances who either like cold chicken or don’t.

Just like chicken feet or durian, different cultures like or dislike it. It’s not usually a particular ethnicity that likes or dislikes it. It’s just personal preference.

24:30 - Hokkian fried rice is a Chinatown special and came from Hong Kong 茶餐厅 (diners?) and has nothing to do with place which it drew it's name (FuJian/Hokkian) where you won't be able to find it, similar to Singapore fried vermicelli (星洲炒米, can't find it in Singapore) or West Lake beef thick(?) soup (西湖牛肉羹, can't find it in XiHu, Hangzhou) 福建炒饭 is definitely S tier and introduced it to my children who agree wholeheartedly
