I love watching your recipes and also making them. My problem is you use grams and mililiters instead of cups, tablespoon or teaspoon. Can you please convert them so that it will be easy to follow your recipes. Thank you.
What is with everyone not liking grams and mls? Its universal so every country can use it. Cups and spoons are different in each country so its harder when measurements are given this way. For example 1 tablespoon in USA is 15mL but its 20mL in Australia. But 1 teaspoon is 5mL in both countries. So using cups and spoons will stuff up the recipe if u r not using the same measurements.

Marigold Haro Marigold Haro, The basic principle for a swiss meringue butter cream is 123 , say if you use 1/2 a cup of eggwhites 1 cup of sugar, and then 1/2 cup of butter. Just apply this principle and you can make your own buttercream without the scale

When you make the mocha icing, you mention that the milk is still hot when you slowly add the butter, but you don't mention the temperature of the milk. Could you let me know?It' s a beautiful cake.

+candy vicoria yes specially if your butter is at room temperature, but as you can see in my video my butter is still in a little bit hard stage so I add it when my eggwhites is warm but not hot it helps cool down the egg whites also a factor is my mixer is in a high speed

rowena use the same recipe then instead of coffee add melted chocolate start with 100 grams taste if you like it iff its not chocolatey enough add a little more. Hope this helps
Can I substitute 35% m.f. whipping cream that's been whipped for the butter then mix it with the meringue mixture ? I'm not a big fan of butter being turned into icing.

+Jennibeth Kapili make sure that there is no traces of egg yolks in the eggwhites even a drop, make sure that all the equipment that you use is free from oil preferably use a glass bowl or metal bowl avoid using plastic bowl. if you are gonna be using room temperature butter make sure that the eggwhites is not hot or else it wil just melt your butter and your swiss meringue will be runny

Ask lang po ng advise. Bkit po kapag add ko na yun coffee mixture sa icing nagiging watery po siya and it looks like the coffee is not blending in. What can i do to prevent this. I dont normally have any problem with, its just lately. And haven't change anything from the ingredients.many thankz
phoebe cutie , you can do it two ways, you can use room temperature butter but you have to wait till the eggwhites is at room temperature , the other way is use cold butter like what I did in the video and add it a little at a time to the eggwhite that will cool down the eggwhite mixture , they both work.

Each egg is different so I cannot give you how kuch 132 g is exactly but the formula for swiss meringue butter cream is 1-2-3. 1 for eggwhite 2 for sugar and 3 for butter for example. 1/4 cup eggwhite needs 1/2 cup sugar and 3/4 cup butter.

Put in the fridge and then when you need it take it out of the fridge set it to room temp at least an hour before you need it

+Toshi Ellar you can add butter when its like marshmallow if your butter is at room temp, like I said in my video my butter is cold so I added it while my eggwhite sugar mixture is still lukewarm

If your butter is soft you have to wait till the eggwhites cools down before adding

264g of sugar is equal to how many cups po
396g of butter is how cups po
Each egg is different so I cannot give you how kuch 132 g is exactly but the formula for swiss meringue butter cream is 1-2-3. 1 for eggwhite 2 for sugar and 3 for butter for example. 1/4 cup eggwhite needs 1/2 cup sugar and 3/4 cup butter.
can I use whipping cream then just add coffee and chocolate?

Harri Ford you can its more complicated to give an exact amount since swiss meringue buttercream depends on how much eggwhites you have but say for every 1 cup of granulated sugar it is equivalent to 1 3/4 cups of powdered sugar.
