This is the best recipe for osso bucco that I have seen on UTube or in any book. Very well explained. Even better than Lidia's! I tried it for Sunday lunch, and it is perfect! Everybody loved it, it looked beautiful, smelled wonderful and tasted even better! Grazie!!

For the broth, instead of veal broth, buy some beef bones (preferably shank bones that are cut to open the marrow) sprinkle with a little salt and pepper. Roast in an oven at 400F for 25 minutes. Straight from the oven into a pot of water to cover and add rough chopped onions, carrots and celery. Slow boil it for an hour or so. Let it cool until you can touch it then clean out the bones, strain it and you have some stock that is so rich, you will never find in a package in the store.
Oh and while it's not exactly in Puglia, Sassi De Matera is a truly amazing place. Your Italian family lives in a very beautiful place.

Hi Joe, I'm on to my 12th annual Super Bowl Party or as its been coined the Osso Buco Bowl Party. It started with a few buddies and has increased to 10 buddies and seems to increase every year. lol. I slow cook it at 250 for 5 hours and its always amazing. But i think i'm going to introduce a few of your secrets to my recipe for tomorrow's Osso Buco Bowl. The cinnamon and the pancetta. I like your recipe it may be my go to for my upcoming years of Osso Buco Bowls. Thanks for the tips and i have subscribed to your channel because i think your a great chef. Very good Joe , but it's even better when the sauce is passed through a seive , reduced ,skimmed of fat and then add the gremolata .

I thought I was the only one. lol I save black coffee dregs in the fridge from my daily coffees, use for meals like osso buco, chili, coq au vin, etc. A little black coffee seems to deepen the flavors.

Love your video and your personality. I will subscribe after commenting. Have you tried it in a pressure cooker yet? I bought beef shanks and would like to use my Instant Pot, but not sure. You suggest white wine because red would overpower the veal, how about if you are using beef shanks? Thank you so much.
Yes pressure cooker is great and will shorten the time. All good on wine. Either will work. Ciao Joe
