pre-requisites
1) Admin console access of Google Workspace.
2) The sender(Gmail) email user's username and password.
2) The username and password for email users in Google Workspace (for testing purposes if the emails are migrated successfully or not)
Major steps.
A) For Gmail:
1) Enable IMAP.
B) For Google Workspace:
1) Create similar/different email users to migrate emails to.
2) Create email migration task configurations.

You have to restart the migration again to do so. Thus the best idea of performing the migration is during off hours when the emails are not flowing.

No, it will not delete automatically. You have to delete it manually.

you may have pasted the wrong source email address. The source email address should be the one of the Gmail user.

No, it will not erase any of the previous mails. It will jsut copy those to Googe Workspace email user.

No, once the migration from Gmail to workspace completes, then after there is no auto-sync in between.
