    well, for starters KFC uses a lot of black pepper (more than what he uses) in their seasoning, along with a few more ingredients missing all together, there is parsley, and lemon pepper in it too that I know of. And they don't use liquid egg or milk, rather it's powdered and mixed into the flour. They also dip the plain chicken into water, then coat it. And, if you want to get really technical, they have special vacuum sealed fryers for their chicken, that give it that really soft texture. From a former KFC Employee.

    as a former KFC employee of the 90's I can tell you now no milk or eggs were used in making the crispy chicken. There may have been powered eggs and or milk in the seasoning packets we mixed into the flour but we dipped our chicken in plain water. also the raw chicken was marinated over night or at least 12 hrs before cooking and that doesn't count the seasoning added to the flour before breading.

    Not to be a dick but this is how you make Southern Fried Chicken. *Kentucky Fried Chicken is fried in a pressure cooker. It was the Colonel's secret to really moist fried chicken.....which was not much of a secret if you were from Kentucky.

    So I started working at KFC recently. They literally don't even tell the employees what's in the recipe, we have these packets of seasonings that we mix in with the flour. Also, we have this weird powdered milk and egg that we mix in it too

      +Turkeyrolls Yeah I used to work there too, and no they don't tell you what's in it, but you can look at it and see a lot of it, like the shit ton of pepper, and the green herbs, there's lemon pepper, and if you sample it, you can taste a lot of what you can't see XD

    Hi Nicko. I've been following your recipes for some time now and if I may, I would like to suggest: if you fry your chicken straight with the batter, it will never work. You must pre-cook your chicken (50-75% through) with nothing added, just salt. You can do this using and oil pressure cooker (ideal), a regular pressure cooker or even in the oven at a low heat. Once you have pre-cooked your chicken, put it to one side and let it cool down.. Then you can dip it into your batter and spiced flour and you deep fry it.. For your egg wash, add 50% of milk and some sour cream Please try it out and let me know what you think.

    You need to precook your chicken. Still pinkish. Chicken can really mess you up if you don't cook it properly. Tip: BOIL IT FIRST...then fry.

    KFCs original recipe I grew up with in the 60s and right up until a decade ago changed . Without those eleven herbs and spices you could SEE in the batter gone and now it just tastes like every other fried chicken. Two pieces of breast could feed an adult along with a few fries and slaw but now the chickens have gotten so small you'd need four pieces to weigh up to the same amount.

    I got a secret if anybody will care for a more healthier and more juicy chicken. I learned this on my Culinary school 2 years ago. So whatever you do on the chicken let's say breaded like this , just let it brown in medium - high heat for around 5 mins both sides then continue cooking for 30-40 mins in the oven :) So there's better chance of having a juicy and not dried up chicks.

    I would not fry the chicken first. You don't know if it has been cooked all the way through. Good tip is to BOIL the chicken first. By boiling it, you can be sure it will cook all the way through. Once you have boiled it, THEN fry it.

      No, not burn, just boil the chicken, it is impossible to burn if if you boil it. Just make sure that you do not forget about it by letting the water evaporate.
      If the water becomes low, top it up. The chicken is then well cooked. Once it has been boiled, then fry it.

      Yes, always do it BEFORE you add the coating and the egg wash with flour.

    a simple way to test that oil is hot enough is to place 3 popcorn kernels in the oil as you heat it, when the 3rd one pops, its ready. Also reminds you that the oil is on the stove.

    Definitely want to try this recipe, I love the fact that its no special cups involved with seasoning in it, a tsp of this a tbsp of that, and all of a sudden I'm not interested. Just pour some seasoning less or more. Great job for being down to Earth and not with all the extra specifications!

    10 minutes is a little too short for completely safe for thick pieces. The best way is to get yourself a digital meat thermometer (less than $10 at WalMart) and cook your chicken to 170°f internal temp at the thickest part of the meat without touching the bone.

    Nothing about this video talks about the 11 herbs and spices Colonel Sanders claimed he used in the original recipe chicken.

      You're right! The mixture shown here is missing a lot of the subtle flavors that separate the Colonel's chicken from other recipes. The exact nature of the KFC spices is still a secret, and the proportions used today aren't the same as they were when Harland Sanders was still running things. One can get pretty close to the original "Original Recipe," though, since enthusiasts have reverse-engineered the product through lots of trial and error. Here's one attempt:
      1 cup all-purpose flour
      2 teaspoons salt
      1 teaspoon pepper
      1 teaspoon dried basil
      1 teaspoon chili powder
      1 teaspoon garlic powder
      1 teaspoon dried marjoram
      1 teaspoon onion salt
      1 teaspoon ground oregano
      2 teaspoons paprika
      1 teaspoon dried sage
      2 teaspoons Accent (MSG seasoning)

      guicapone2 Sorry, but I can't help. I went to a KFC near my home, and they'd never heard of the Mighty Zinger. So I went to the KFC Web site, and it's not listed on the menu. It must be something from KFCs in some other country, but not here in the USA.

    Not bad but you forgot 3 essentiel steps:
    1/Cook the chicken a little before hand because as you can see, it was still pink on the inside
    2/Celery powder, really adds to the KFC smell & flavor
    3/Lemon pepper (normal pepper will do though).
    PS: I find double-dipping unnecessary

      fashiondicate Q boil the chicken for 10 mins in salt, no longer because it will become rubbery. Then season the flour and dust the chicken in the seasoned flour before frying!

      Nicko's Kitchen Nicko, there's people that disagree with your recipe, but I don't. There's just a couple of things that would make it perfect. I think if someone wants the exact recipe, it would include a quite a bit of black pepper. If you look closely at "real" KFC chicken, you can see little black dots of black pepper all over it. This is what gives it the "flair" but you also have to fry the chicken once, then dunk it again in the coating to build up the thickness of the skin and coating , then fry again. Cheers

      If you have a cooking thermometer you could use that. The chook is cooked when the internal temp is at 74c.

      do you think those powders only have the ingredient on the bottle in, they have a lot of the other ingredients in to give the powder a more "authentic" taste and are the ones used in the original recipe.
