Bread four
1 teaspoon vital wheat gluten
1 cup all purpose flour
I make 5 lbs at a time or do it as needed. Store in an airtight container. The bucket was from Home Depot and the lids are from Amazon amzn.to/44gmcMd

I have made my own bread flour for years. You save even more if you purchase organic flour. I can find 5 lbs of organic flour for about $6. I also use Bob's Red Mill Vital Wheat Gluten Flour, which is less expensive and I purchase it at Natural Grocers. You can also make your own cake flour by adding 2 Tablespoons of corn starch to 1 cup all purpose flour. (APF)

My biggest problem is the QUALITY of the commercially available flour. I’m really glad you added the part at the end about the Costco organic unbleached flour. The cheap commercial Sams club/Kroger regular all purpose flour is GMO over processed crap. I did recently buy a grain mill and sourced single mill organic ancient grain hard red wheat, I’ll add the vital gluten to what I mill.
I have used this recipe a couple of times now and I will never go back. Thank you so much for sharing this. My sourdough is so much better since doing this. Honestly I will never go back.

I’m a make it myself gal. I’ve been like this since childhood. It strengthened when I got older and realized that I want what I want but can’t always find it. Sooooo…. I make it myself. Food items, decor, etc. I don’t eat out. I find the recipes for what I/we like and make them myself and they taste better and I can control what I’m ingesting.😁 My health is not good so making things myself has been beneficial. Great video. I have always added the Gluten to my AP Flour while I'm assembling my bread ingredients. That way I don't have a special "Bread Flour" container. Just AP Flour and Gluten containers. Also I make my own baking powered - 1 part Bicarbonate of Soda and 2 parts Cream of Tartar mixed as I need it. (No Self Rising Flour Containers either)
Just came across your channel; you remind me of my niece I don’t get to see often. You keep it real and that’s how she is. I bake bread and Kolaches a lot. My grandmother was Bohemian and made a lot of Czech pastries, so I have her 150 year old family recipe for bread and I keep it going in my family. Oh well, I enjoy the show.

These types of tutorials are great. I also recently watched a video about how to make heavy cream which I'm going to try because half and half is a must for coffee.
How do you make the heavy cream? I use half-and-half in my tea.

According to the videos I saw it requires blending melted, unsalted butter with milk.
I bought a nice bread machine not realizing I need to use bread flour with it. Regular flour never works out for me in the machine, & I hate that. This video was really useful for me. Thanks
I love my bread machine. I use it for everything.
I love self rising flour to make pancakes - makes great pancakes. Pancake recipe so easy:
1 1/4 cups self-rising flour
* 2 tablespoons white sugar
* 2 teaspoons baking powder
* 1 1/4 cups water or milk to your desired consistency (I use rice milk)
Add vanilla for best pancakes
Use coconut oil in pan for cooking

OMG. I'm so happy that I found this tutorial. I have a lot of AP flour but this weekend I ran out of Bread flour and was not able to bake because all my recipes ask for bread flour. I have a bag of Vital Wheat Glutten that I got to bake a German Dark Rye Sourdough bread and have no idea how to use the rest. Thanks to you I plan to convert my AP to bread flour. The ingredients in bread flour are hard (vs soft) wheat flour, and Malted barley flour. I don’t know how to “malt” the barley flour, but that’s what gives the higher protein & therefore rising power.
I don’t have the space to store all the kinds of flour, so I do use vital gluten flour to assist my whole wheat breads in their rising. The instructions on Bobs Red Mill gluten flour suggest 1 T gluten flour per C of whole wheat flour. So I just add that as I make each batch of bread instead of having it premixed in the flour
You can add malt powder to it also. I bought Diastatic malt powder from King Arthur flour

The cheapest flour at my Walmart is $2.38 for 5lbs I couldn’t find any vital wheat gluten sadly but I just made my own bread today for the first time and it came out amazing!!!!! It looked and tasted sooo much better than store bread I’m never buying store bread again lol (I might cuz I’m lazy 😅) but it’s so good i made a loaf of bread and I made buns for my cheeseburgers I had for dinner!! But now I need a nap lol that was hard work haha ❤❤❤
Thank you! I have my grandmother's whole wheat bread recipe which I've kind of adapted to the bread machine... Grandma just added twice the yeast of a "normal" bread recipe; hers uses an entire 5 lb bag! Sometimes it works, sometimes it comes out like a lead balloon. ha. Besides halving the amounts so it will fit in my bread maker, I use a white whole wheat flour (the tannins in red wheat dislike me a lot-- I get the white whole wheat from a Kroger affiliate out here, but grinding your own works). I will try adding the gluten to the whole wheat and see how that goes. I've never seen whole wheat bread flour in any store I've been to.
Back when my son could eat gluten, I made whole wheat bread in a bread machine. I added vital wheat gluten to help the rise.
I was so jazzed to come across this video today. I was at Sam’s today with my hubby, and had to promise him I would figure a way to make bread flour. I was trying to buy bread flour, but to my dismay they didn’t sell it. They only had the a p flour in bulk. He didn’t want to spend the money on a large quantity of flour. ( he can be very short sighted when it comes to buying in bulk, but when we get down to brass tacks and start figuring out the per oz cost, he will eventually give in. He said I probably wouldn’t find a way to create the bread flour, to which I reminded him that if it’s possible, it’s on the internet. Anyway, back to the beginning. Buying in bulk as long as you use it saves so much most of the time. There are some items that this isn’t the case so we breakdown the price like you did. Good job! Sam’s does have a bread flour online as well if you don’t mind paying shipping. If you have their more expensive membership it does ship free. It is pretty good and I use it often. It’s called pizza and bread flour and comes 25 lbs at a time. Thanks for watching!

Yep. I do that. In rough numbers, the difference between AP and Bread flour is about 1% - 1.5%, depending on the brand. I use 500g of AP (from Sam's) for my basic bread recipe and add a couple of teaspoons of gluten to make it "bread flour". Works great and A LOT cheaper than a 5# bag of bread flour.

I have always wondered about this, but I never did the research. So, thank you very much. I make these Lion House Rolls (which are the best dinner rolls you'll ever have) & it calls for 2/3 cups of instant non-fat dry milk. WoW, what a difference it makes. Use only food safe plastic buckets. They are marked as such and also available in Home Depot, Lowe’s, etc. They are made without BPA chemicals and don’t leach in chemicals and flavors into your stored foods.

I am gobsmacked at the price you pay for bread flour. I am in Northern Ireland where EVERYTHING usually costs an absolutely fortune. We make all our own homemade breads too but a 1.5kg bag of bread flour(which is around 3.3lbs for you) only costs me £1.09. ($1.36 in Dollars) And all other bags of flour are around the £1 mark too or less, for instance the Plain flour I buy is only 70p ($0.88)for a 1.5kg bag. And that's with the price hikes and inflation numbers through the roof. I am genuinely shocked at the your prices. Usually American prices are way better than ours. @@LittleHillHomesteadGa oh my goodness, what food are we not known for, lol. Being an Island, we have incredible fish dishes like chowders and Dublin prawns are enjoyed the world over. But we are also a nation of farmers. Our diary products and meats are truly some of the best. If you've ever had the pleasure of eating Irish butter, you'd instantly taste the quality and notice the flavour difference. We are also big vegetable growers and potato farmers, so making things like potato bread and Irish boxty is very common (a boxty is like a potato pancake and is usually served with your main. So it can be stuffed with delicious fillings or served along side a meal). We also love soda bread, soda farls etc. A soda farl cut in half, toasted and smothered in Irish butter then topped with fried mushrooms, bacon if you want and brown sauce is definitely a favourite breakfast feast....it will certainly keep you going all day. I better stop before I bore you to tears. I'm sure you can tell that I am passionate about cooking and baking, teehee.

I’m so new to all this , I’ve only made a few things , took forever to get starter to work, now I’ve had two loaves wouldn’t rise up, so I saw yet another video of ladies using bread flour, I have no room in my small kitchen left but I said ok I’ll try that, I was looking at phone and saw your video. Welcome! Give it a try. Is you yeast new? Often when it doesn’t rise it’s the yeast or when you are letting it rise I would pop it in a warmer placeZ
Milling my own flour is the greatest thing I’ve ever done!!!! Soaking the flour with the water in a recipe is SO SO HELPFUL!!! Loved this video! Do you use all organic and unbleached AP flour? Well this video answered a question I had about bread recipes from Sue Becker’s book on HOme ground flour. I was wondering why this ingredient was added to almost all of the recipes in that book. So it is basically taking the home ground flour and adding the extra protein to it to make it more equivalent to bread flour. Thank you so much for this video. I am now a new subscriber. Very helpful video! Just a tip. When you mix weight and volume measurements in a formula, you are actually making it more complicated that it should be. If you give a ratio based on weight, it can be scaled to any amount. And measuring in grams is super easy if you have a metric scale. But thanks for the videos!

Doing it today! I’ve had great success in my sourdough. Recently, got some cheap AP flour….like 20lbs🤦🏻♀️ made bread 😢 Hubs was like “ What happened 😳” Often I’ll mix sir Arthur bread flour with AP👍 but I’m out. I’ll update 🥰

That’s a great idea. I had never thought of doing that.
Bread flour doesn't "have more gluten". It is a different type of wheat so it MAKES more gluten. All you do by adding vital wheat gluten is up the gluten. You aren't changing the flour. The flour itself is still more tender and fragile with less protein than bread flour but has the added gluten to hold it together and give stiffness. Just like adding cornstarch to AP flour doesn't make cake flour. It just lightens the AP flour.

I add my vital wheat gluten as needed, since there are a lot of things that can be made with all-purpose. So I have a quart jar with my gluten in it. So if I have bread flour, I use it for high gluten needs, I also take into account that King Arthur AP flour has 11.8 percent protein. That's almost bread flour (12%). So my King Arthur flour is high protein .
My supermarket brand calls 10 percent protein "bread flour." That's the stuff I use for noodles, biscuits, pizza, etc.

Check a restaurant and bakery supply store near you. US Chef stores (a supply store chain in my area) have sacks of gluten and a large variety of flours. They are a wholesale supply store for restaurants and smaller bakeries etc, but they sell to anyone. There are some good buys there.

Hi again! I just commented a little while ago, but we are like minded on making what we can buy way better and way cheaper. When it comes to flour, do you happen to own a grain mill? My husband got me one several years ago and I buy soft and hard wheat berries that store super well and I grind my own flour, oat flour, rice flour for whatever I need to use it for. I will grind fresh and bake right away in the winter so I don’t lose the nutrients, but will grind and then pack and freeze the flour in pre measured bags to pull out and use and keep most of the nutrients lost to flour that has been sitting. I was just curious, because you do so much from scratch and from whole food. Still binge watching…..😊

It’s already there and you will be amazed at how your bread rise, shape, taste and are easier and more forgiving to work with. The one I have can’t do nuts, but I do oats, wheat berries, rice, corn, concrete, tree limbs…. You name it!
I use bread flour for everything! Cakes, cookies, biscuits….everything!
Have you ever looked into purchasing King Arthur organic bread flour from the Websteraunt store? I think that the prices that they have a really good cause they supply restaurants. And you can put things in and out of your cart to look at shipping to make it even more cost effective.

If you shop at any store with a decent bulk food section, they probably have vital wheat gluten available. I shop at Winco (it’s only in the western US) and have been buying vital wheat gluten there for years.
Before I saw this video, I never thought to actually make bread flour! I’ve always just added the wheat gluten to the flour as I make the bread dough. Thank you for the proportion - now I can make it ahead of time!
I love winco! We loved in California and they had it. I recently was in Texas and made sure to stop and stock up. We don’t have anything even like it in Georgia. I have to get most bulk stuff online which stinks!

Do you have a cinnamon raisin bread recipe?
Not yet! Typically I just make my sandwich bread and when I have it in a rectangle before I roll it I sprinkle with cinnamon, sugar and raisins. Once it’s topped I roll it into a log. It’s delicious. I’ll see if I can film it for you.

The big bags of Walmart Flour are around $9-10. A bread flour I’ve been using is Dakota Maid that I get from there. Around $12 for a 25 pound bag.

I get vital wheat gluten on Amazon. But I have been getting 50 lbs at a time of bread flour at Sams and it has been great. I have the vital wheat gluten as a backup but I have a roll recipe that uses it too.

Buy 50# KA from supply house. Sir Galahad is AP, Special purpose is Bread Flour, and Sir Lancelot is super high gluten (14%). All are around $25.

I love King Arthur flours.
I only use King Arthur all-purpose. I add nothing but water, yeast, salt and olive oil and it comes out just as good as using the “bread flour”
Been doing it for years and there is no difference in bread quality. Plus, all purpose is cheaper
Cortez Milling sells Red Rose Bread flour in 5, 10, 25.and 50 lb bags. Very reasonable and superior bread flour. What she paid for 29 oz of gluten, I bought 25 lb of Red Rose!
