Alfredo lasagna from scratch. Make ahead and freeze!
We have been making this for years and still love it. We have adjusted it over the years based on diet, taste and time we want to take to make it. It is easy to adjust to your taste.
Vegetable lasagna
Heat oven to 375 degrees.
one box of lasagna noodles cooked according to box directions or one recipe of homemade pasta ua-cam.com/video/Bvmp9wPXGkI/v-deo.html
You will need about 1 lb. of shredded mozzarella in total
For the Ricotta Mixture:
2 cups ricotta cheese ua-cam.com/video/1drSLWaBxsA/v-deo.html
1/3 cup freshly grated Parmesan cheese
3/4 cup shredded mozzarella cheese
2 tablespoons sliced green onions
2 teaspoons chopped fresh parsley
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
Stir everything together in a medium bowl and set aside
For the Vegetables:
2 cups sliced mushrooms
2 chopped carrots
1 cup chopped onion
2 cups chopped bell peppers
1 sliced zucchini
2 cups broccoli florets
1 cup frozen or fresh spinach
cook in a little olive oil until soft about 10 minutes
Alfredo sauce (double for a wetter lasagna, we prefer it doubled)
1 1/2 cups of milk
3 Tablespoons butter or low fat margarine
3 Tablespoons flour
1/4 cup parmesan cheese
3/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon nutmeg
warm milk, butter and spices in a pan, once warm add flour and stir, add cheese and stir until thick. Remove from the heat and set aside.
Pour about 1/2 cup alfredo in the bottom of a 9 x 13 baking dish. Lay out lasagna strips to cover the entire bottom of the baking pan. Spread or clump 1 cups of the ricotta mixture over the strips. Top with half of the vegetable mixture and spread out evenly. Cover the vegetable layer with alfredo sauce and then a handful of mozzarella cheese. Repeat this layering until you run out of toppings (about 3 layers). Top the final layer of lasagna noodles with remaining alfredo and another handful or mozzarella.
Bake the lasagna for about 45 minutes. It will sometimes overflow so we place it on a cookie sheet. Remove from the oven and let stand for 5 minutes, covered, before cutting to allow it to firm up.

      You can find dehydrators for not a ton of money and often at thrift stores. I’m not sure where to find good powders but once you get a dehydrator you will use it often.

    I’m NOT normal….never have been and never will be….so….I would love to have enough freezer space to do a challenge….I have a lot of dehydrated veggies and other shelf stable things…..I need to get a digital canner…..that would make our life so much easier! There are only 2 of us here. We have a good sized fridge but we need a freezer and don’t have room for one now. Not that we ever will…..LOL. I try to keep enough food here “just in case”….but you never know. My goal this year is to get a gas stove. Total electric stinks! We have a well…..we really need a whole house generator but you know how $$$ they are. We’re 75 and 78 years old….I’d give anything for a freeze dryer but I KNOW that will never happen….it would solve so many problems! Anyway, I love seeing what y’all are doing! And I love the humor in your dealings with each other. Reminds me of us! If I was younger, all this would have happened before now…..damn, being old sucks!!! ❤❤❤

      We talk about getting gas/propane in our home too. All electric is a pain. I’m still not sold on the freeze dryers. I need to dig into it more but I do so much other ways I’m not sure if I’d ever spent thousands on one.

    Combine equal parts butter and flour, form it into a round log or square/rectangle, and freeze it partially. Then score lines to create squares or slices, then fully freeze it. When you need to make a quick pan sauce, just remove one or two pieces from the freezer. There is a fancy French name for this, but I do not remember it.

    Instant pot makes amazing roast, pulled pork, ribs. It’s excellent for meats in general. But also so many other meals. I use mine a couple times a week. I will definitely try extracts in it next.

    I made them and they looked gorgeous, put on the icing and cut into. Well they were not quite done enough. Still real good, but a little too much underdone. I cooked for 20 minutes on 350. My oven, I think cooks a little under temp. So they are oowy, gooey, but a little too…lol. Love the ease of making them this way and will definitely make again. Just a few changes for our old people taste. Thanks again.

      I’m sorry they were undercooked. It’s so hard since our oven runs hot sometimes. I let them cool about 10 minutes before I frost them. Yum!

    I pressure can my dog food. Cheap meat, carrots, bell peppers, spinach or kale, sweet potato or butternut, green beans or asparagus, apples, blueberries, cranberries, kelp, egg (freeze dried - make my own). Sometimes brown rice or quinoa. Cabbage is too bulky but they love it raw so get it as a treat.

    The label list hydrogenated oils(palm, coconut or soybean) Have to try making this. Only problem is that non fat dry milk from the 70s was nasty and gross. Maybe it's gotten better.

      I’m pretty sure that they have improved it since then and it’s way better! I use it all the time! I’ve tried ordering a cleaner one from Azure a few times and it’s always out.

    Hopefully this will motivate me, again. I started cleaning out the pantry and deep freeze, but life happens. I had not felt like doing anything. Happy Belated Birthday Baby Brother 🎉🎂 from one baby sibling to another!

    We just went through the winter storm here in Missouri knowing the storm was coming I premade several dishes ahead like chicken and noodles taco meat I prepared lettuce and had tomatoes for salads and it came in very handy during the storms our roads are finally cleaned off but it helped being prepared for sure live your mixes I’m gonna make the pancake mix sounds good thanks ❤

    Hi ya guys, I am a new subscriber, I just looked up Claris, I use to live in Pasadena but retired and moved to arrowhead mountains, but I still go to Pasadena and they have a Claros in arcadia, or I can hit the one in upland California n the way home… I am going to get there in a couple of weeks… yumm Thanks for the heads up

      My brother lives in running springs. The Arcadia one is the one I grew up going to. We lived in Monrovia. When we lived to Fontana we would go to upland. Love the smell of that place.
