    I started eating bitter melon after reading that it's one of the factors that contributes to the longevity of Okinawans. I salt them and marinate them in garam masala, turmeric, lemon, and chili powder. I bake them for about half an hour. It's really tasty. I'll have to try making a veggie version of goya champuru. Thanks so much, Nami-san!

    Ohhh In the Philippines, we call it “Ginisang Ampalaya” hehe. We also put salt in ampalaya to reduce bitterness.

    I love bitter melon! We usually serve it with beef and black bean in garlic sauce with gravy. It would be interesting
    to try this gravy with your pork belly and tofu! Also, if you blanch the cut and cleaned bitter melon in boiling water
    for about 1-2 minutes and drain the water, this can also reduce bitterness of the gourd.

    Great! Now I learn a new bitter melon dish. We only stuffed the Goya with minced meat and steamed it or cook it as soup. I will definitely try to cook this dish.

    this is my family dish. we always eat in dinner but we use thai goya. it,s more bitter. we can reduce bitterness by salt.

    I have not used this recipi yet .Looking forward to making it .Can I ask ,Does it taste bitter in the recipi or does it take away from the bitter taste ? I'm sure it will be delicious. Thank you for posting

    I don't like bitter melon since when I was little. Haven't eat them for years already. But after watching your video, you made me want to give it a second chance! This dish looks delicious! I am sure everything tastes better with bacon too. 😁 Thank you for sharing.

    I love this dish! Except I don’t use salt at all. Too much sodium. Just the soy sauce is good enough to make it salty. Yummy!

    Now I've watched the video, thumbs up. Interesting technique of cooking the ingredients all separate - keeps the shape and color. I always cook pork first so the oil is released for the following ingredients. And I use thick pork belly because I cant admit to liking Spam!

      Thank you! I tried with different orders. I like to make sure tofu gets nice char, so I spend time cooking that first. The pork oil (yes!) stays in to coat everything back in the pan at the end. :) I debated to try spam but it's a bit salty for my kids so I usually cook with pork belly and make it crispy and delicious. :)

      Yep I'm going to do that with the tofu as I don't like it all mushy at the end. Plus if I do it this way I can prep the ingredients before hand and have this for breakfast rather than an English fried breakfast (>-

    If you would like to lessen the bitter taste, before cooking, follow the instructions below.
    1) Cut open the Bitter Melon, discard the seeds and slice into 1/4 inch thickness.
    2) Sprinkle some salt and mixed well, cover with a kitchen towel and set aside for about 10 minutes.
    3) After 10 minutes using your hands squeezed out as much juice as you would like.
    4) You can now cook and enjoy Bitter Melon!

    I like bitter Melon simply stir fried with julienned potatoes, onions, garlic, turmeric and bit of cumin. Served over rice.

      Hi Nami, as it turns out, my Asian supermarket where I frequent had NO goya today!! I was SOOOOOO disappointed!! So, I will try again next week to see if they get any into stock. I'm very sure it will be a successful dish when I do make it! I will let you know how it goes.

    Now it is bitter melon season in China too. Though they are fresh and available everywhere, I seldom cook them because of the bitter taste. This looks interesting.

      This one is pretty delicious compared to other bitter melon dishes we tried. My kids are okay with this one but not others... :)

    my extremely fat conscious family refuses to eat pork belly. I suppose I could substitute turkey bacon for the pork component?
