Growing up in the States, I thought bitter melon was the grossest vegetable ever whenever my mother would make it. Now, as a middle aged man and mom’s not around anymore, I can’t get enough of its crispy, juicy, bitter taste. Thanks, Chef!
For the first time I saw this veggie at an Asian Farmer's market, so I had to try it. I cooked it exactly as instructed (adding a little bit of lime juice). Yes it's bitter but it''s refreshingly bitter. Thank You Chef! Next time, I will try it with green apple, that will take away the bitterness and makes it even more refreshing to eat. I will slo try to juice it as it's good for health. I am committed to try all vegetables Asians eat. I'm convinced their old history and culture knows better than the Western cultures. :) lol Thanks again for this video.
Hi Tom. I heard that bitter melon is good for people with diabetes. If I want to add the bitter melon to a smoothie to treat my diabetes, how much do I put in the smoothie? I don't want to use too much of it for fear of having hypoglycemia. After I chop it up, do I use 1/3 cup or 1/2 cup - how many cup do you recommend? Your response will be greatly appreciated. Thanks.
try to eat in Indian house , you will love it , it is very tricky vegetable , you normally get bitterness away by adding salt and vinegar before cooking
Finding Calabaza China Bangaña at the local supermarket, I've bought one, and I will be making it your way Chef Tom, thank you for sharing, 👍and greetings 👋from Mexico.🤠
Just remember, the soil may change and make things bitter whatever is planted after it. I was told by my mom that happens with bitter melon. Not sure it’s true but you may want to inquire
ask. any Indian family to cook . you will love it , cut bitter gaurd and put salt and vinegar , keep it for 1/2 hr , wash with water , bitterness goes away quite a lot and then you cook
@@sandeepdewan1920Thank you very much for the tip!!! But how much salt and vinegar you put on it? You put it straight on the melon or you dissolve it in water and soak it?
The first bittermelon I had was REALLY bitter and I had no idea how to eat it without a chaser. That was about 12 years ago. Lately whenever I get bitter melons they've not been very bitter. They still taste awful but they aren't very bitter. If I'm going to go through all that awful I t least want the benefits. The last one I got is kinda fat and green but the other ones in the pile at the Korean store were already starting to deteriorate. Am I choosing wrong? Should I get the prickly Indian one?
I tried making kimchi out of bitter melons. I found out that I couldn't eat very spicy foods unlike when I was in my '20's.. I put in pepper with a starter from a sourdough ( water, yeast and flour and sugar to ferment for at least 3 days) to make a vinegar. Then I blanched the bitter melon with a little sugar (to activate the sour dough)and some salt. Then I mixed in, garlic ginger and sliced shallots. Then the Korean dried powdered red chiles. It was good but I can only eat a little at a time.
The Chinese karailie isn’t very bitter. I eat it raw with dhal and rice. The Caribbean one is much more bitter and I still eat it raw because I love the bitter taste
Skip eating this and get bitter gourd/bitter melon capsules. Take morning and evening with meals. Unfortunately, the VERY bitter seeds are where most of the fruit's active ingredient, momordicin, hangs out. I find the actual fruit is far too bitter for me. I tried cooking with tomatoes, vinegar, citrus...nothing worked! Best of luck!
peel bitter gaurd , put salt and vinegar , leave it for some time , wash with water and then cook it and stuff meat , potato's etc . try Indian way of cooking , you will like it
I tried that many years ago while visiting family in the Caribbean. They called it "Ugly fruit". I called it "disgusting". I'll have to try again with your recipe.
I've never heard it called 'ugly fruit' in the Caribbean. And 'ugli fruit' is the Jamaican tangelo, a member of the citrus family. No relation to bitter melon.
I don't understand why you are tryng 'to kill the bitterness'. Here in China, we love it BECAUSE it's bitter. And preparing it with Laoganma* is just strange - it will totally overpower the gourd. We normally cook bitter melon with beef. Or with pork and fermented black soy beans (豆豉 - dòu chǐ). Not jarred black bean sauce! *What type of Laoganma? Laoganma is just a brand name for several sauces. That's like saying add some Heinz! meaningless.
yes if you can stand bitterness then it is o k . many people like it bitter , in fact juice of raw bitter gourd has lot of benefit .this is doctor saying
I cup has 3.9 carbs. I don't call that high. What are your limitations? I guess everyone has a different level. I have yet to try his recipe. I can already feel my taste buds shrinking in horror!! LOL LOL

What brand of wok do you have. The cooking surface pattern is so cool
I think it's weird and gives me chills

Easy to grow! Only do one plant or you might have TOO MANY bitter melons! Buy one from the store and grow the seeds from it.
Can you make one with douchi? I had it once at an Asian restaurant at Asia Town and it was good but never learned how to make it.
Thanks for the recipe, can you leave the skin on or should remove the skin?
Your stove clock says 11:11 at the beginning of this video!! How cool is that? ❤

Do you have a suggestion of how much ginger to use in this recipe? Thank you!
use Indian spice liberally

it is the way you cook , bitterness can be reduced to little by getting it out by adding salt , veneer and then cook
