    Mom being from Okinawa, I've eaten this all my life...I hated it at first, but now, at age 55, I eat this dish almost every day!!! Yummm!Good job...looks great!!

    As a cluless cook from Minnesota that just went nuts at the farmer's market and bought every veggie that I didn't recognize in my quest to Taste All Of The Things, I can't thank you enough for your video! I am so excited to cook the goya I bought! (...and the bok choy and the snake gourd and the napa cabbage and the thai eggplant and the leeks and the...) :-)

      If you bought the goya in Minnesota, you probably bought them from Hmong farmers. The quality will be amazing. Traditional Southeast Asian ways to cook it is with a pork stuffing in a clear soup. Also, stir fried with eggs. There are recipes on youtube under the more common name, "bittermelon." Enjoy!

    Our only local tofu producer makes this type of tofu. I got caught totally by surprise. The package said firm but this was way past firm. Thanks for the recipe, I now know how to use this. I've been afraid of bitter melon since my sister made some 30years ago. I've heard it's great for diabetes so I think I'll try it again.

    Hi Bitter gourds are very low in calories but dense with precious nutrients. It is an excellent source of vitamins B1, B2, and B3, C, magnesium, folate, zinc, phosphorus, manganese, and has high dietary fiber

    The outside of the goya has an unusual and strangely beautiful looking texture. If I ever obtained one, I would just look at it, it's mesmerising :)

    Took me a few tries to enjoy this dish, goya is an acquired taste. but, it's very delicious once you are used to it!

    A vegetarian version of this recipe substitutes grilled shitake or porcini mushrooms for the spam. And instead of dashi which is made from fish, a reduced kombu stock was used with a bit of balsamic vinegar for the umami flavour. It's quite good, too.

    This looks so delicious! I want to try it. I agree with Satoshi, I can eat tofu by itself, especially when it is delicious fresh tofu. I think tofu is a chameleon; it is an expert of taking on the flavors and seemingly changing as it cooks with other sauces and ingredients. I just love it! Thanks for the wonderful goya dance. Great video! :-) PS I'm looking forward to the agedashi tofu video. Please make that, along with the taco rice video!

    My mom would make me eat goya when I was a kid, so the bitterness doesn't bother me at all. I learn to love it and I always buy them whenever I see fresh ones at Asian supermarket.

    I've always wanted to try goya champuru. You've inspired me to cook this recipe someday. I like goya, but I roast it with loads of Indian spices, so you can't really taste the bitterness. Thanks for the recipe, and I hope you had a smooth flight back to Japan! P.S. The boy band is back! Hooray!

    Isn't Goya one of the reasons why people in Okinawa are the oldest in the whole world? I sw a documentary about the health benefits and how doctors think it's probably the reason why people reach that high age like barely nowhere else, and beeing so healthy^^ I did had goya, just pure itself, it wasn't my taste but then together with other ingredients in a dish it was pretty okay. I'm just not a big fan of bitter things, even I wish I would love it, so I always give it another try to get familiar with haha. Thank you so much for this recipe, it looked soooo delicious *^*

    I learned to like bitter melon as well. My usual method is to stir fry with black bean sauce. This looks delicious. Will have to try.

    If you can't find Goya in your Asian grocery look for it in the Indian market. That's where my mother-in-law buys it. She's from Okinawa by the way.

    Filipinos eat bitter melon. I used to eat it at work. we had wonderful Filipina nurses who could really cook. Have you heard of oppo. It is a long pale green gourd. Can you find some and cook it with shrimp. Being a nursr I met a lot of wonderful diverse people. We dont have a Japanese community here in Houston. Come and educate us. Hi ya from Texas.

    ive been watching quite a few of your episodes, i like the Daiso product test i wish you could do a lot more. From now on ill be one of you're subscribers because of this dish. I've done some dishes with bitter gourds before but not with tofu, Ill try it soon

    After seeing this today, I just had to make it. Sadly, I don't have easy access to goya, so I used one of my favourite green vegetables, bell pepper. It turned out amazingly. Next time I will source some goya, so I can make it properly.

    Oh my.... that goya champuru looks delicious! I think the goya looks like a very bumpy cucumber and I imagineed the flavor of it being like a sour cucumber lol

    another way to lessen the bitterness of the bitter gourd (goya) is to soak it in salty water for a few minutes. my mom always do this step first whenever she cooks bitter gourd, by the time it's ready for the pan the bitterness is almost gone, drain well and add to the pan.

    Goya is my favorite vegetable. Ilocanos call it parya, & eat the leaves & flowers too. There's many dishes that use Goya in Filipino cuisine.
    It's funny how I had actually been eating a close recipe of this dish all my life, no tofu, with garlic instead, but also now have the Okinawa version too.

    I had champuru with an Orion beer in Okinawa. I seriously could not believe how salty it was. Spam and okinawan tofu were like a salt bomb. Love me some bitter melon though.

    I love bitter melon. I cook it the same way but I add pork instead of tofu. In my country we have a great bitter melon and grilled eggplant salad dish.

    I'm going to keep trying bitter melon because of the health benefits, but it was really harsh. Although it will make it less authentic, I think I will add spicy flavors like garlic and red pepper flakes. Do you use black pepper or white pepper?

      Actually most of the recipes here are pretty good if you're on a reduced calory diet. Even with a bowl of rice, they're probably only 500 calories or less per portion.

      Genetically modified isn't the problem. The problem is the coagulant used to separate the curds from the whey. The drying process is also a problem, because good tofu gets dried with cheesecloth or other such organic materials, and American factories tend to press them out with heavy plates of some kind. Not sure if they're metal, ceramic or what.
      But it's the lack of the organic drying method that makes the American tofu taste "bland" to me.
      If I make tofu at home (not that hard), it has the classic "Japanese" flavor because I use cheesecloth to dry it.

    Idk if they sell the flavored spam variations in japan but the teriyaki spam goes best with this recipie :)

    Okay, I had to try it. I took my mother shopping at an Asian grocery store this weekend and picked up a bittermelon to try. It's--not bad. Still slightly bitter, but nothing like the bitter bombs I remembered as a kid. Spam is really the champion of the dish, though! If you took out the bittermelon, I wouldn't miss it. But if you took out the Spam, I would be sad. :)

    Thank you for the video. I’ve been very curious about how to cook bitter cucumbers. Every ingredient looks healthy except the spam. But it looks very yummy though. I would cook without spam or with chicken breast.

    Ohayo Brothers! I remember having bitter melon soup as a child, and disliking the bitterness of it. I never paid attention to it after that. This recipe though! Oh my gosh! It looks so good! I’m definitely going to look for it soon.
    I love how you crumble and brown the tofu in this recipe. It makes the dish look more rustic. I thought for sure that brother Satoshi was going to reach for a can of beer as a weight, rather than the bottle of tea. ☺️
    I’m definitely going to try this recipe soon. Hubby is having knee surgery, and will not be able to do a lot of exercising, so I’m searching for healthier recipes to make. GOYA DANCE!! ☺️

      American tofu and how it's made and used here are rather drab in the flavor category. Japanese tofus are far--far--better. I won't buy tofu at the supermarket, but I usually grab a brick or two when I go to a Japanese or Asian market.

    you can also soak the bitter melon in water with salt for around 1-2-3 hrs.

    We can purchase a high-protein vacuum packed extraordinarily firm tofu that does not need to be pressed and it's very thick like yours.

    crumbling tofu = more jagged edges = more surface area for flavor to permeate tofu :D (you were right on the dot, Shinichi)

    There’s already salt in the soy sauce and in the spam, so I think it’s okay to skip the sea salt.

    I'm highly sensitive to bitter, I'm sure I couldn't eat goya. I find milk too bitter even 😕 my bff thinks I'm insane.

      Most people who are sensitive to bitter are supertasters, meaning people who have more taste buds than the average person. Because they get more of a wallop of flavor from whatever they eat, supertasters are notoriously averse to bitter flavors.
      I'm one of them, so I feel your pain.
