If you bought the goya in Minnesota, you probably bought them from Hmong farmers. The quality will be amazing. Traditional Southeast Asian ways to cook it is with a pork stuffing in a clear soup. Also, stir fried with eggs. There are recipes on youtube under the more common name, "bittermelon." Enjoy!
Our only local tofu producer makes this type of tofu. I got caught totally by surprise. The package said firm but this was way past firm. Thanks for the recipe, I now know how to use this. A vegetarian version of this recipe substitutes grilled shitake or porcini mushrooms for the spam. And instead of dashi which is made from fish, a reduced kombu stock was used with a bit of balsamic vinegar for the umami flavour. It's quite good, too.

I think tofu is a chameleon; it is an expert of taking on the flavors and seemingly changing as it cooks with other sauces and ingredients. I just love it! Thanks for the wonderful goya dance. Isn't Goya one of the reasons why people in Okinawa are the oldest in the whole world? I sw a documentary about the health benefits and how doctors think it's probably the reason why people reach that high age like barely nowhere else, and beeing so healthy^^ I did had goya, just pure itself, it wasn't my taste but then together with other ingredients in a dish it was pretty okay. I'm just not a big fan of bitter things, even I wish I would love it, so I always give it another try to get familiar with haha. Thank you so much for this recipe, it looked soooo delicious *^*

Filipinos eat bitter melon. I used to eat it at work. we had wonderful Filipina nurses who could really cook. Have you heard of oppo. It is a long pale green gourd. Can you find some and cook it with shrimp. Being a nursr I met a lot of wonderful diverse people. We dont have a Japanese community here in Houston. Come and educate us. Hi ya from Texas. h

After seeing this today, I just had to make it. Sadly, I don't have easy access to goya, so I used one of my favourite green vegetables, bell pepper. It turned out amazingly. Next time I will source some goya, so I can make it properly.
Oh my.... that goya champuru looks delicious! I think the goya looks like a very bumpy cucumber and I imagineed the flavor of it being like a sour cucumber lol
another way to lessen the bitterness of the bitter gourd (goya) is to soak it in salty water for a few minutes. my mom always do this step first whenever she cooks bitter gourd, by the time it's ready for the pan the bitterness is almost gone, drain well and add to the pan.

Goya is my favorite vegetable. Ilocanos call it parya, & eat the leaves & flowers too. There's many dishes that use Goya in Filipino cuisine. It's funny how I had actually been eating a close recipe of this dish all my life, no tofu, with garlic instead, but also now have the Okinawa version too.

I had champuru with an Orion beer in Okinawa. I seriously could not believe how salty it was. Spam and okinawan tofu were like a salt bomb. Love me some bitter melon though.

I'm going to keep trying bitter melon because of the health benefits, but it was really harsh. Although it will make it less authentic, I think I will add spicy flavors like garlic and red pepper flakes. Do you use black pepper or white pepper?

Actually most of the recipes here are pretty good if you're on a reduced calory diet. Even with a bowl of rice, they're probably only 500 calories or less per portion.
Genetically modified isn't the problem. The problem is the coagulant used to separate the curds from the whey. The drying process is also a problem, because good tofu gets dried with cheesecloth or other such organic materials, and American factories tend to press them out with heavy plates of some kind. Not sure if they're metal, ceramic or what. But it's the lack of the organic drying method that makes the American tofu taste "bland" to me. If I make tofu at home (not that hard), it has the classic "Japanese" flavor because I use cheesecloth to dry it.
Okay, I had to try it. I took my mother shopping at an Asian grocery store this weekend and picked up a bittermelon to try. It's--not bad. Still slightly bitter, but nothing like the bitter bombs I remembered as a kid. Spam is really the champion of the dish, though! If you took out the bittermelon, I wouldn't miss it. But if you took out the Spam, I would be sad. :)

I’m definitely going to look for it soon. I love how you crumble and brown the tofu in this recipe. It makes the dish look more rustic. I thought for sure that brother Satoshi was going to reach for a can of beer as a weight, rather than the bottle of tea. ☺️ I’m definitely going to try this recipe soon. American tofu and how it's made and used here are rather drab in the flavor category. Japanese tofus are far--far--better. I won't buy tofu at the supermarket, but I usually grab a brick or two when I go to a Japanese or Asian market.
Do you know someone with a soy allergy? I'd love to hear about how they navigate things in order to avoid it in Japan, as I heard its the largest allergy to avoid there.
Most people who are sensitive to bitter are supertasters, meaning people who have more taste buds than the average person. Because they get more of a wallop of flavor from whatever they eat, supertasters are notoriously averse to bitter flavors. I'm one of them, so I feel your pain.

If you can't find Goya in your Asian grocery look for it in the Indian market. That's where my mother-in-law buys it. She's from Okinawa by the way.
