I've discovered I like my poppers with a softer skin on the jalapeno. I'll actually blanch the jalapenos by boiling them in water for about 8 minutes. My other peeve is when the cream cheese oozes out. I solved that last time by using a muffin tin to keep the jalapenos more or less upright (I core them whole and use a pastry bag to inject the cream cheese). At one time I had bought a special rack to hold the jalapenos upright on Amazon, but that got lost a while back.
I love your idea of adding back in some of the pith and seeds to add spiciness.

I put the 2 halves back together, then wrap in bacon. So I can flip them over on the grill to get the bacon nicely finished all the way around without the insides oozing out. Great video, definitely got some new ideas of how to do them.

Of course! That is such a perfect solution! And mighty delicious to boot!! :-)

I do them like this sometimes, but sometimes I also like to add either corn meal or bread crumbs, and/or a bit of beaten eggs to the cheese mix. It helps them be more "filling", as well as keeping the cheese from oozing down to the bottom of your grill. Thanks for this appetizing video, and can't wait till my garden has a nice pepper harvest!!

Thank you for the idea of adding back in the insides to create a bigger spicy bite! We tend to use those pickled jalapenos in a can, instead of raw, for added depth of flavor. But I do all of what you do for the BEST poppers. You have to season the cheese mixture and bacon is a MUST! Great video, thanks!

I make a slit down the side, pull seeds out (leaving the membranes), stuff with filling, then use wood tooth picks to hold the slit closed before grilling or baking. Sometimes I dip them in batter and deep fry for extra yummy!

for bacon as thick as you are using, I usually drag a knife backwards to stretch it out and make it thinner, the bacon cooks much quicker that way.

I add a slice of chicken on top of the cream cheese before I wrap it with bacon. But I make mine about the same. It’s a family favorite and a labor of love.

I love makin these. You do them very similar to the way I make them. I also put the seeds and pith back in the cheese. I like mine pretty spicy, so before I wrap them with bacon, I give them a good dusting of Reaper or Scorpion powder. I've watched a bunch of your videos today and enjoy them. New subscriber here. 👍👍

    ". . . because, more bacon equals -- Y E S S." @5:31
Heck yeah!!! Bacon makes everything better. Thanks for another great addition, Mike. I like to add either crumbled bacon or sausage to the mix with a little cheddar for some good color. I have GOT to try the chorizo, now that you mention it. I love that stuff! I also appreciate the little tip about adding in a simple mix of spices (chili powder/garlic/cumin in this case) . . . will start incorporating some of that in the very near future. I always enjoy your videos. Keep 'em comin'!!!

Mike, bro had me at bacon,👍, I usually blanch them a bit, don't remove inside but like what did, I'm gonna try that, when say spicy chili powder do you mean there's a hot? You made me laugh with bacon, I'm gonna add bacon to mix like usual, but also wrap👍, always thought bacon in the cheese was enough now I'm ashamed to think that🤣😂, I've done leftover pulled pork, and cheese steak, now have to try chorizo 🤤, grill is best, can freeze a dozen and send to me🎃, I'm gonna wrap also from now on, saw the episodes on screen will check, but have to get menemen going then work🥵, tyvm tc
Oh, one time had gorgonzola, mozzarella and roasted chicken left and stuffed poblanos if that counts lol. Just mixed hot sauce and ranch for quick dipping. Man just had idea. But gotta take pan off😂🤣

Bake in the 350 degrees F. Bake them for 20-30 minutes, or until the peppers soften and the bacon is starting to crisp. I have a post here you can review: www.chilipeppermadness.com/recipes/bacon-wrapped-jalapeno-poppers/
