  • Today we are preparing for Spring gardening and looking forward to planting in the next couple of weeks! Also tonight for supper we are having Salisbury steak, mashed potatoes, homemade biscuits and corn on the cob!

    Y’all let me know how the sound is, we are trying out new mics to hopefully bring you better quality videos!
    Salisbury Steak recipe
    2lbs ground beef
    1/2 cup crushed crackers or bread crumbs
    1/4 cup milk
    salt, pepper, onion powder, garlic powder, Italian seasoning, paprika to taste
    1/4 cup AP flour
    Chicken Broth
    worcestershire sauce
    Combine ground beef, crackers, milk and seasonings. Patty them out, dredge them in flour, brown in frying pan with grease. Remove once golden brown. Add flour to grease, make a roux, add worcestershire sauce. Add in chicken broth until gravy is the consistency of your liking . Add patty's back into gravy, simmer for 15-20 minutes.
    Biscuits
    2 cups AP flour
    1-2 tsp salt
    1 heaping tablespoon of baking powder
    2 tbsp lard
    2-3 tbsp butter
    1 cup(ish) of buttermilk
    Combine flour, salt and baking powder. Cut in lard and butter. Add buttermilk until you have a workable dough. Cook on 450 for 10-15 minutes until biscuits are golden brown.

    Your alls channel is my very favorite to watch!!!!! You all are living like I was raised up. Good country folks and that's the best kind of living! I'm 70 yrs old and I love watching you in the kitchen cooking up good southern meals, Megan!!! You cook exactly like I was taught! You all are a wonderful family and you're raising such blessed and precious children!     Love watching when I can. Beautiful family. I want to give you an easier way to put up your frozen corn on the cob. Take your fresh pick corn. Cut both ends, peel outside layers of husks off, leave at least 3 layers of husk on. Place in bag and freeze. When you cook, take out what you want to cook, run under water to peel off husk and silk, cook. This way keeps the true flavor of your sweet corn fresh. You can even cook the cobs in the husk on your bbq. Hope you try

    My mom used to make syrup out of the edible lilacs. I wish I had access to them in Southern California, but alas not where I am. She would put a cup of sugar into a cup of boiling water until sugar is dissolved, add two grates of lemon peel, no more, then put the lilac flower petals in the mix and let it simmer for 15 or 20 minutes (nothing green as greens have an unpleasant taste). Strain it and enjoy it in cold or hot drinks OR (the best part) over some vanilla ice cream. (I saw you pouring out the potato water...I always made potato bread with my potato water after reducing it down a bit if there's too much. Now it's just me, so not much anymore.)

    So relaxing to watch you work around your property like that. I am totally enthralled watching when you show your kids at work and playing - it reminds me of when I played with my brother like that when we were young. Watching mom preparing the meals is the same as watching the kids play, it just makes me feel good and brings back so many memories of my years growing up watching my ma and pa do the family thing...LOL Thank You 💚

    I wasn’t smart enough to remember how mommy did it , but she put all her flour and wet ingredients in the wood platter and the hand squeezed them biscuits out and gave them an oven bath. Us 7 kids never complained cause we never went hungry .

    I used my old cracked water trough too! I filled it with cardboard, limbs, some rocks , top soil and topped w compost. I have sage, rosemary, basil, cilantro and oregano and a couple garlic bulbs in it…. They grow fabulously clustered intensively together! I may even add a currant type tomato plant for the summer. 💚

    Mr. I got to say. Meagan is a one in 10,000 to cook like she does. Wants to make sure her family is feed with the most healthy foods. That is unheard of these days. The last woman I seen do that was my mother. My choices are McD, BK, or maybe if I’m lucky KFC. Love watching you guys.

    Andy,
    Put the plug back in the water trough and drill some drain holes in the sides 6-8” up on it. If not , they dry out way too fast due to where the drain hole is. I’m doing the same with three old ones myself Works great !!

    Never understood why some folks would season up their flour to dredge up their chicken, pork chops and country fried steak off in it, then dump it when they're done, then turn around and use fresh flour for their gravy.
    That's just wasteful to me.

    Meagan, my husband (Grumpy Old Man) is falling in love with your channel. Several times when discussing what we're going to cook for supper, I've told him, "Well I was watching Meagan cook so and so. What do you think about that?" He's always excited.     You can shorten that leaky water trough someday: cut half way up all around and then you have a ground-ring plus the bottom section and you'd have two raised bed opportunities.

    😂gurlfriend ...I made me some strawberry biscuits this morning. I just made them with sweet milk rather than buttermilk.
    Cut the strawberries 🍓 up fairly small.
    Added them in last. Only added one cup so they wouldn't be heavy biscuits.
    Made a little glaze and boy they was good. I bet your kids would love them.
    I growed up with my mommy making a little chocolate gravy as a treat 😋
    You ever eat that as a kid?
    I still make it when I go to the beach with my friends.
    Their kids love when Aunt Tena comes along to cook all week.
    Lol.
    I'm happy to cook all week and they cover my part of the beachhouse. 😂

    I so enjoyed seeing the kids at the creek. That is where I spent a lot of my childhood, on the creek. Also the river fishing with my grandpa. Great place to make memories.❤❤

    Have you ever made biscuits the old timey way by tossing your lard off in the middle of a bowl of flour and pouring buttermilk off in there and squeezing the lard into the mix?
    I was done married and had two younguns before I made em by cutting the lard into the flour and then adding the buttermilk.
    My daddy seen me making em like that one day and thought I was crazy, thought they wouldn't be no good, and no telling what else he thought that he didn't say.
    So come time to set down for supper I asked what he thought about em, and he said I was such a good cook he couldn't really tell if they was better or worse.
    So I done up two batches that weekend, one the old timey way the other the new fangled way and had him try both.
    Well, he said they was just as good but he didn't understand the point of it.
    But when I told him it saved sticking your hands off in that cold buttermilk, he was all for it.
    When I was almost two years old he made me scrub my hands and set me on the kitchen table and set the biscuit bowl off in front of me and learnt me to make biscuits.
    I originally thought he done that cause I was always aggravating him to let me do something, but he done it cause his hands was tore up with arthritis, he was fifty-nine years old when I was born so he started learning me all he could as soon as he could.

    Have been watching you for a week now and stayed up last night until 4:00am this morning.
    Was watching the show about your plans for 2024 and I noticed your bacon was really nice, but I have one suggestion, build a small smoke house and smoke the bacon and hams from your hogs. I think you would really like it.
    I am in Tennessee just north of Knoxville and all I can raise is rocks, so I am going to try a raised bed. At 79 years old I am not too old to learn new techniques.

I was raised in Hickory Tree and Valley Pike out from Bristol,st the foot of the mountain. I love your channel can't wait to see all your videos.     So a friend of mine saw a landscaping company putting trees at the hotel and she went and asked them landscapers. Can I have those Pots or what are you gonna do with those pots And that-man said take them .,so she got about 30 of them gave me about 10 and I don’t have no grass in my backyard so I’ve been growing in those for 4 years now and I do amend the soil And I also used two of them because they’re so big to make my own compost and it works out really great and she called me the other day and said she had a few more so I’m gonna ask her because now that I’ve been rowing and watching y’all, I have learned so many things like to be not disturbed ,like the carrots and the garlic and the potatoes and things like that so I’m going to be using pots for specific plants

    I use mine for planting potatoes I have two of those got sweet potatoes in one and I've got regular theaters in the other they work great my taters grow like crazy in them

    My son and daughter-in-law have a homestead and grow Cornish Cross chickens. They do grow fast and the meat is delicious!

    I love the way yall live onyour farm. It is so goodto have good food to eat and know that you grew it or raise it. That's what we do. I grow my vegetables and I buy my meat from a rancher except chicken. I grow them out.

    Love your Channel love the area id love to live there& live like that reminds me how I grew up on the Pamlico river in eastern N.C. spent alot time with my grandpa he passed away in1994 he had a little land & animals, garden,etc we just in summer had seafood from the river to.
    My wife passed away 5 years ago me& her always wanted to do what you all are doing I still do my Children are grown just me& my 2 dogs I'd love to live where you all live so if you ever need a old man farm hand let me know would love to move there or come spend some time there.. I've done a lot of what you all are doing so I have experience just have to learn your way Routine.dont want no pay just a little place to lay my head a tiny one room , wood heat, place I can rest& play my guitar in evenings..

    I see people
    Using all these collagen powers and capsules. Talking about how important to take collagen and it’s expensive!, those supplements. When you poured that chicken broth in the skillet… I was like, heck yeah! That’s the way you suppose to get your collagen! Plus, we are jello as kids and soups from bones , etc. we never had any collagen deficiency

    Where I live here in KY we have Mullen growing everywhere. I would like to know from Megan what all can be made from it.besides Mullen the only thing else that grows wild is rocks lol lol.thanks for shot us what all you can pug in pots to grow.ever since I found your channel I love to see you all with new videos. Sadly as more and more people work from home on there computers these skills get lost . I just noticed this video was made on my birthday !!     Hey Andy and Meagan. Your birds look awesome. And you only lost the one 🤔. Wow. Valley Farms right? Andy glad to see that you did go ahead and plant crimson clover. That’s spot on man. 👍🏽 I said I was going anti-poultry netting, but I can’t go back. You gave me the confirmation I needed in this video. Actually I think I’m going order me some more. Maybe in the meanwhile someone will come up with a better more durable product. IDK. Maybe I’m just too picky. 😂😂😂

    I recently found your channel and really appreciate how you share the things you are trying in such a clear and down to earth way. I'm up in Minnesota repotting my plants, waiting to get them in the ground and I watch your videos while tending to my plants. I can't wait to get things outside but I am able to learn from your activities and get a glimpse of spring through you! You guys are doing such a wonderful job at life, it is not just educational to watch but it really is enjoyable.
