Ingredients:
All purpose flour 250 Grams
Soda 5 Grams
Sugar 10 Grams
Water 130 ml
lemon juice 1/2 Numbers
Butter 150 Grams
Boiled eggs 4 Numbers
Directions: Take a bowl add all purpose flour, salt, sugar, lime juice and water, make it into a stiff dough, add 15 g of butter and knead it well, then it rest for 15 minutes. 2. Roll the dough like a ½ inch in thick sheet, apply the butter up to ¾th part of the sheet and sprinkle the dry flour, and fold like a envelope. 3. Take the sheet and place it in the tray, cover it with a wet cloth and put it in a fridge for 20 minutes. 4. Repeat the same process for another 2 times 5. Now take out the tray and apply the butter on the sheet and fold like a book, cover it with a wet cloth and put it in the fridge for another 10 mins. Cut the required piece and roll into thin sheet by using dry flour. Cut the sheet into length wise. Add salt and pepper powder to the center of the square and place one half of a boiled egg on the top. Fold two corners to the center, gently press with your fingers to seal. you can make any shape you want. Brush the top with milk. Place the puffs on the baking tray and bake it for 220 degree centigrade for 20 minutes. Serve hot.

Dufour makes a great all butter puff pastry - this with chettinad masala is a favorite! Place the egg yolk side up and sprinkle with cilantro at end. Makes a beautiful elegant presentation!

Thanks for your recipe sir. We tried and the taste was awesome but the ploblem is that puff sticks to bottom and it is difficult to remove puff as a whole... Kindly suggest some solution

I love egg puff coz there is lots of sweet memories of my hostel life at vishakhapattanam and most important I used to eat it with tomato soup which is served in my canteen...Just I loved it so much.

If you're in USA(not sure about others), buy Pepperridge farm puff pastry sheets, and either you can follow that recipe or you can cook some veggies, with, salt, garam masala etc., and bake it for 20 mins at 350F, and serve with mint chutney or maggi ketchup..!

Wheat flour does not give you the layers and the crisp texture.

I tried this recipe n came out good..the lemon had added an amazing flavour to the pastry, but the amount of salt that was mentioned in ur recipe is way too much.i used just as per taste as my butter was also salty, and i did not need 150 gms of butter.. i was left with 70 grms at the end

Applying so much butter or ghee or margarine will increase cholestrol in the body.Any other substitute that can be added to make puff sheets
