    We soaked (泡) our rice (饭) in a warm, sumptuous bowl of abalone brine, to make sure every spoonful is full of that rich umami that keeps you coming back for more!
    Of course, any type of canned abalone would work but the savoury brine in Fortune Chile Abalone is seriously a game-changer. Grown in Southern Chile’s Patagonia Rain Forest, not only do these abalone have a stunning golden colour and beautiful shape, they are also sweet and buttery!

    Ingredients:
    2 cans Fortune Chile Abalone
    1 can Fortune Razor Clams
    2 tbsp Cooking oil
    1 stalk Leak
    1 Onion
    1 knob Ginger
    4 cloves Garlic
    1 Carrot
    2 stalks Celery
    2 tbsp Shaoxing Wine
    2 liters Water
    1 tbsp Fortune Abalone sauce
    1 tbsp Fish sauce
    1 tsp salt (to taste)
    1 tbsp Sugar
    200g Shimeji mushrooms
    300g Daikon
    30g Dried Scallops
    400g Cooked rice
    Garnish:
    100g Overnight rice
    2 Eggs
    2 tbsp Cooking oil
    Cooking oil for deep frying
    Salt
    Chopped scallions
    Coriander
