Ok I had to review this cake today. I made this cake this morning because its one of my Thanksgiving cakes I'm making for the in-laws. Test taste day!!! Test taste day!!! Oh my goodness this cake turned out extremely moist and delicious. I'm in Texas so the degrees on my oven was different. I cooked this at 335 F for 45 to 50 mins. Usually I bake at 350 F but it would have burned the top of the cake I feel. I absolutely love this recipe!

What do we do in the US where there is no caster sugar?
Someone correct me if I'm wrong, but in most cases you can substitute caster sugar with regular white sugar.
Blitz some granulated sugar if you can.
I had to do this when I ran out of caster sugar.
A great tip from my mom who has baked for years and it worked really well 😁
