The turbines in the engines would create vibrations in the cockpit. There would be sound, but NOT outside the ship. Only from the pilot's POV. Of course, realistically the ships wouldn't have pilots. Robots can pull substantially more gees than a flesh and blood pilot. Even a wookie.
So, you're pointing out that sound can't travel in space, and so any kind of space travel would be completely silent? A point that everyone has known for decades, but accepted in films because otherwise you'd just be watching a silent movie?
