Making Chillie/Hot Sauce - using up our garden chillies to make a hot and sweet tropical hot sauce!

Today we are making some chillie sauce/hot sauce with the chillies from my garden! We had a mixture of chillies, what we think it habanero and or scotch bonnet. We got the seeds from a few people and planted them over the last 2 years and we have been harvesting good crops of chillies each year. So today we decided to make a hot and tropical chillie sauce, or as the Americans call it, hot sauce!
Ingredients
800g mixed chillies
2 large onions, roughly chopped
12 cloves garlic
1 tsp rough salt
1 1/2 cups vinegar plus more to thin sauce
1/4 cup brown sugar
1/3 cup oil plus extra to get consistency correct
1 pineapple
2 tbs lemon juice
Store in the fridge and use wherever you use hot sauce.
