It could be a heat distribution issue with the thawa - use your spatula to press the center down and make it brown. It could also be that the rotis are not evenly thin - try to roll it as thin as you can and as evenly as you can.
Hi, I got my thawa more than 30 years ago and maybe even 40 years ago. The best shot for getting a similar one in Durban would be in a shop like Sataars.

We call it Dahl puri in my country of Guyana, SA. Traditionaly we make it this way, but the only difference is adding baking powder to the flour before mixing it with the warm water. I always have issues with averaging of the baking powder when making large amounts. This looks good without baking powder. I will try this way.

Hi, it normally doesn't steam up. Maybe because the container remains open for the duration of making the rotis.

Yes I think I refer to it as dhal puri at some points in the video as well. It is how we call it here in South Africa as well!

I have a Philips food processor that I use to grind the dhal into the fine grind we use.

Hi Jennifer. Pea dhal becomes very mushy and soft when boiled. Gram dhal retains some texture so it’s better to use gram.

The dhal was already in the water. I took out a little bit and showed it before adding it back in and then adding the hurdee and salt
