      The device might be an original but I don’t believe that the method involved is all too mind blowing. White Castle punches holes in their patties for the same reason and the enclosure for keeping in the juices and even cooking is something that burger joints do with the half sphere lids, I think.

    I’m a burger purist but I like Masa’s approach because he’s clearly focused on what makes a good burger at its core and not with “improving” the standard burger.

    It makes sense that he doesn’t like condiments. The mans whole life has been dedicated to using the fewest best ingredients, and making them shine. Top quality soy, fish, rice, and wasabi. That’s all he needs.

    Went there Thursday evening and can confirm that the burgers are truly out of this world. Also, the blood orange whiskey cocktail is a delightful surprise and just as enjoyable as the burgers!

    When he said no toppings, I finally felt like I was understood by someone. A burger with toppings can be great, don't get me wrong, but there's something amazing about a burger that's just about tasting the beef, with maybe a bit of cheese to add to it in such a specific way. Since they come from the same animal, the flavour profiles just compliment each other perfectly with taking anything away from either. He must truly make an amazing hamburger.

      I do understand where you're coming from but we have something for that. It's called steak. When you want beef naked you get a steak. When you want beef with a bunch of other flavors you get a burger because generally its lesser quality meat.

      I like a little crunch, so I'll do just cheese with some fresh sliced jalapeno or even a little shredded cabbage. It's sweeter than lettuce and has a better crunch. And not on a bun, toasted bread. Like a nice rye, crusty peasant style, sourdough, or even pumpernickel. My grocery store bakes really good bread in house, I get that rather than the big name brands, way better.

      Yo man I also feel it, however, I do think a single pickle helps. It cuts through the richness many burgers with cheese have and the sour compliments the taste. That aside anything else is too extra

    @ 3:20 when Masa goes in for a bite of fries, that's a good sign you're with a great chef. Still so in love with cooking and food he has to snack on something he's probably made and eaten thousands of times over. Even with a camera there haha

      The masa restaurants all use the same chopsticks, which are made of untreated japanese cypress - they're special ordered from japan by the restaurants.

    Love Chef Masa so much. 👍 I have a set of square *_pie irons_* that are similar but without the internal spikes. Took them on a camping trip many years ago for toasted sandwiches but abandoned them because aluminum foil is easier, no clean up and less space. I may dig them out of storage and try making a burger. 😀

    This is how I snagged my wife, first time she spent the night at my place she said she was hungry and wanted to get some fast food. I gave her a “WTF” look, give me 30 min. Cooked her a full 3 course meal. She fell in love and never looked back. Granted she blames me for her 20 lbs she put on since we met but still love her to death.

      (Granted, I will put a lot of that in the freezer and have it over the course of weeks.)

      @@Buddashii LOL well that would burn up the oils as you can see the "chef" tilt the pan and who uses CBD oil anyways. It'd be better to get distillate, which is already active thc, and add it after, like in the condiments.

    I’m definitely an enthusiast and not an expert, but in my head, I generally categorize hamburger patty cooking methods into “oily,” “wet,” and “dry,” with various styles, equipment, and techniques producing/providing different combinations of those effects.
    This device and procedure looks like a really fascinating hybrid between dry (peep those dark char marks) and wet (notably the way that Japanese-style Western cuisine likes to serve “hamburger steaks”). Depending on whether or not he’s oiling the inside of that press, or how much fat is rendering out of his ground beef, there may be oily elements going on in there too.
    Very curious. Never seen anything quite like it before. Looks delicious, and really makes me want to try!!

    What I love about the old chefs, even those who became celebrity chefs, like Masa or Wolfgang Puck, is their work attitude. When they started there was no such thing as a celebrity chef, they were simply workers in the kitchen. I'm sure there were complicated egos even back in the days, but they were tradespeople working away in the background. I admire that.
