They can be plugged into the UDM Pro SE ports because that has POE. The UDM Pro does not support POE in it's switch... but yes, you can do that with the proper UDM.

Are you doing network too? or just Unifi cameras? If you are doing network too, the new Unifi Ultra Gateway Max may be a better option for you... Good price, built in storage options and a powerful router... if you are just adding cameras, then it sounds like the CK+ will be a great option.
UniFi ones I would put on the camera network however if they were another brand like Arlo or Blink or even Reolink, I might be inclined to put them on the IOT network.

This has nothing to do with the NVR unit but that of what's included with the UDM Pro/SE. Your title is misleading.
I do see your point. We did set up protect on our UDM which is the NVR. Sorry for any confusion.
